Cilantro Chicken


Ingredients

Serves Four
4 boneless skinless chicken breast halves (2 lb. total)
1⁄4 cup lime juice
1⁄2 cup fresh cilantro, chopped
6 garlic cloves, chopped
1 tablespoon honey
1 tablespoon olive oil
1⁄2 teaspoon salt
1⁄4 teaspoon pepper

DIRECTIONS
1. Pound the chicken breasts to an even thickness (about 1/2 in.) and place in a shallow baking pan.
2. In a small bowl, mix lime juice, cilantro, garlic, honey, olive oil, salt, and pepper. Pour over chicken and turn pieces to coat evenly. Cover and chill at least 30 minutes or overnight.
3. Lay chicken on a grill over medium heat and cook, turning once, until no longer pink in the center, 4 to 6 minutes per side.

4. Serve with salad or vegetables of your choice.

Looks tasty! Love coriander with chicken. I once got a recipe off the web that needed cilantro - spent ages going from shop to shop asking for it and no one knew what it was. Looked it up when I got home...:-)

In case any readers are not sure what cilantro is:

"Cilantro is an herb with wide delicate lacy green leaves and a pungent flavor. The seed of the cilantro plant is known as coriander. Although cilantro and coriander come from the same plant, their flavours are very different and cannot be substituted for each other. (Some countries refer to the cilantro as coriander, so any references to "fresh coriander" or "coriander leaves" refer to cilantro.) It can be easily confused with flat-leaf parsley in appearance, so be sure to sniff carefully. Look for a bunch with unwilted leaves in medium green. Found fresh year round in most markets."

Sometimes you just want an easy but tasty recipe idea - I think this fits the bill.
Just prepare the chicken the previous night, and voila a very tasty dish the next day!

The very first time we were given cilantro was at a neighbor's home when they were cooking pizza. We couldn't stand it but imagine our surprise when we bought it by mistake years later when we thought it was the tastiest thing we had ever tried. We use it a lot these days and I shall look forward to making this recipe. Thanks Jan!
