Pork With Pepper Kebabs


This recipe is great for barbeques, but if the weather is not BBQ weather …don’t worry …as these can be cooked indoors under the grill. It’s a nice recipe for making pork with green or red pepper kebab skewers. Kebabs are easy, tasty and can be prepared beforehand. You will need 4 skewers for this recipe.

Ingredients - Serves 4 Adults
480g / 1 lb of diced lean pork
2 green or red peppers

For the Marinade:
2 tablespoons of balsamic vinegar
2 tablespoons of olive oil
1 red chilli, trimmed
2 cloves of garlic, peeled and crushed
zest and juice of ½ a lime
1 level teaspoon of paprika
Small bunch flat leaf parsley
Freshly ground black pepper, to taste

Method
1) Place the balsamic vinegar and olive oil in a bowl
2) De-seed the chilli and slice it very thinly. Toss the chilli into the bowl and whisk
3) Add in the crushed garlic, the zest and juice of the lime and the paprika
4) Chop the parsley and stir into the marinade and season with some black pepper
5) Cut the pork into 6 to 8 chunks and add to the marinade, making sure that it is well coated
6) Cover with cling film and leave for at least 1 hour, or overnight
7) Chop the green / red peppers in half, de-seed and cut them into chunks.
8) Then thread a piece of pepper onto the skewer, followed by some marinated pork, and then continue until you have filled the skewer with meat and peppers
9) Repeat the process for the other 3 skewers
10) Place the kebabs on the hot grill / barbeque and cook for approximately 20 minutes until they are cooked through, making sure that you turn them frequently and brush with the marinade occasionally

Carbs per portion is approx 4.3g

We very rarely have a barbeque, but like you say, there's no reason not to enjoy barbeque food cooked indoors.

I think it arrived here after the combine, plough and harrow in the back field gave it a headache! I'll probably annoy it into returning by putting my hose down its run but I'm waiting until the field has been sown.

Meanwhile, impaled on a skewer and grilled seems like a good fate I didn't actually know they were eaten but I know hedgehogs and squirrels were in the past.
