Meatballs in ginger-soy broth : An Asian inspired low carb dish !



A spicy ginger-soy broth gives a unique Asian touch to this excellent low-carb meal. These delicious, tender meatballs are ideal for sharing with a group, just simply double or triple the recipe. 

Ingredients
Serves Two
10g net carbs per serving
3 garlic cloves, minced
1 tbsp. fresh ginger, minced
1 tbsp. fresh cilantro, finely chopped
¾ lb (325g) ground beef
salt and ground black pepper
2 red bell peppers
2 tbsp. olive oil
2½ cups (600ml) water
½ cup (125ml) tamari soy sauce
2 scallions (spring onions)
Tip
To check meatballs are done, take one out and cut it open.

Did you know ... Cilantro is a herb with wide delicate lacy green leaves and a pungent flavour. The seed of the cilantro plant is known as coriander. Although cilantro and coriander come from the same plant, their flavours are very different and cannot be substituted for each other. (Some countries refer to the cilantro as coriander, so any references to "fresh coriander" or "coriander leaves" refer to cilantro.) It can be easily confused with flat-leaf parsley in appearance, so be sure to sniff carefully. Look for a bunch with un-wilted leaves in medium green. Found fresh year round in most markets.

These sound & look SO good, Jan! I love cilantro, but know a few people who actually hate it! Wasn't aware that cilantro & coriander could not be substituted for each other... Will keep that in mind.

I really cannot cope with cilantro leaves. It tastes like dirty soap to me - and I believe my problem with it is genetic. Even a small amount ruins a dish for me.

Not a fan of cilantro. I belong to the group of people that says it tastes like soap. 😺So a parsley substitution would be in order

Is Cilantro a bit like Marmite? You either love it or hate it?

Many people say that when it comes to cilantro you either love it or hate it. You may love it, but another family member may not … you could consider substituting flat leaf parsley in a recipe that calls for cilantro.
