15g fresh coriander, leaves and stems separated and chopped for garnish
Method
1. Preheat the oven to gas 6, 200°C, fan 180°C. Place each of the cod fillets on a large piece of baking paper and divide the spinach and yellow pepper between them.2. In a small bowl, combine the garlic, ginger, lime juice and olive oil and season well. Spoon the dressing over each piece of fish. Fold up each baking paper parcel tightly, place on a baking tray and bake for 25-30 mins, until the fish is cooked through and the spinach has wilted.
3. Meanwhile, prepare your choice of side dish and serve with the fish parcels, garnished with the coriander and lime wedges.

...something that I've never had.
I love the flavor of ginger and curry and add it to many dishes. Never thought about using it in a fish dish, but it sure sounds yummy and healthy. Hope you've been well! Hugs, RO
Simple (but delicious) flavours. Thank you.
yum thai chicken with basil sizzle sounds wonderful. Have a beautiful week - do you have Taco Tuesday in your area of the world.
So delicious!
I love Thai food, but apart from a kit have never made any. You make it sound not quite so hard as it seems!

Hello Sandy, many thanks for your comment and question.
I'd not heard of Taco Tuesday before so did a google search and found this "all those who live near one of the 45 Taco Bell restaurants in the UK can pick up a free treat every Tuesday in August, because from 5 August to 26 August, all of Taco Bell’s UK branches will be participating in Taco Tuesday"
https://metro.co.uk/2020/07/15/taco-bell-giving-free-tacos-every-tuesday-august-12993010/
... and there is more about Taco Tuesday on Wikipedia here

Thanks again for your comment, enjoy the rest of the week.
All the best Jan
This is very opportune, I have just ordered ingredients to make Thai Chicken tomorrow. I will keep these until next time. Thanks Jan and all the best to you :)
That sure looks tasty!
My wife is 100% Thai, plus she has a cooking license, so you can probably imagine the good food I eat!
This looks so easy and delicious.
Oh those fish parcels sound yummy!
This looks and sounds incredible. I'm going to copy that recipe and I've changed the 300 grams to 10.5 ounces. I don't care about converting the ginger. You can NEVER get enough ginger (grin).
I like fish but I will not eat Tofu, just horrible! Valerie
I've never tried Thai food before but this sounds delicious.
Deve de ser muito saborosa esta comida tailandesa.
Um abraço e continuação de uma boa semana.
