Serves Four
360g frozen cod fillets
400g frozen leaf spinach
1 yellow pepper, deseeded and sliced
2 garlic cloves, crushed
3cm piece ginger, peeled and grated
2 limes, 1 juiced, 1 cut into wedges
1 tbsp olive oil

240g long-grain rice (higher carb)
15g fresh coriander, leaves and stems separated and chopped for garnish

Method
1. Preheat the oven to gas 6, 200°C, fan 180°C. Place each of the cod fillets on a large piece of baking paper and divide the spinach and yellow pepper between them.2. In a small bowl, combine the garlic, ginger, lime juice and olive oil and season well. Spoon the dressing over each piece of fish. Fold up each baking paper parcel tightly, place on a baking tray and bake for 25-30 mins, until the fish is cooked through and the spinach has wilted.
3. Meanwhile, prepare your choice of side dish and serve with the fish parcels, garnished with the coriander and lime wedges.
