Last year I did a series of posts called 'Tuesday Trio' and they were quite popular, so I thought why not add a few more this year! So without further ado here we go!

Cheese and Onion Pork Chops
Enjoy (British) pork with melted Cheshire cheese and a kick of English mustard.
This is such an easy dish, a family favourite!
Ingredients
Serves Four
4 pork chops
2 tsp olive oil
1 tsp English mustard
4 tbsp. caramelised onions, from a jar (make your own if preferred)
50g Cheshire cheese, grated
1 tsp thyme, chopped
Courgette / Zucchini fritters ... with a red cabbage and beet salad
These courgette/zucchini fritters are a delight, and popular with vegetarians,
although you don't have to be vegetarian to enjoy this recipe suggestion!
Ingredients
Serves Two
1½ lbs / 700g courgette/zucchini
2 eggs
1 cup / 225ml grated/shredded cheese
2 teaspoons ground psyllium husk powder
1 teaspoon dried mint
1 teaspoon onion powder
4 tablespoons light olive oil or coconut oil
salt and pepper
Red salad
3½ oz. / 100g red cabbage, grated/shredded
3½ oz. / 100g beets, thinly cut
2 tablespoons fresh parsley
2 tablespoons olive oil
1 tablespoon lime juice
salt and pepper
Sunny sauce
2⁄3 cup / 150ml crème fraîche or sour cream
1 teaspoon turmeric
1 garlic clove, minced
salt and pepper
Citrus Custard Dessert
This low carb citrus custard dessert, or posset recipe,
is a conversion of the classic British custard recipe.
Ingredients
2 ½ cups of heavy (double) whipping cream
1/2 cup of sugar substitute (e.g. Swerve)
4 tablespoons of lemon juice
2 tablespoons of lime juice
½ teaspoon of orange extract
Dash of sea salt
Topping
1 teaspoon of grated lemon rind
1 teaspoon of grated lime rind
1/2 cup of fresh blueberries

ReplyDeleteThose pork chops sure do look interesting, growing up my mom would put some kind of breading on hers and cook in the oven but I always gave my breading to my dad because I didn't care for it but this sounds interesting
