Tuesday Trio : Low Carb Recipe Suggestions !

This Tuesday Trio of lower carb recipe suggestions definitely has more of a vegetarian / vegan theme ... but even for meat eaters, it does sometimes make a change to have a veggie night!

The first one in this Tuesday's mix is a healthy salad that can be enjoyed any day of the week.

Caramelised onion, cheese and hazelnut salad


Ingredients
Serves 8
( 7.4g carbohydrate per serving )
1 tbsp. olive oil
4 medium red onions, sliced
2 yellow peppers, washed, de-seeded and thinly sliced
50 g blanched hazelnuts
1 tbsp. white wine vinegar
1 tsp Dijon mustard
2 tsp clear honey
100 g mix of watercress, spinach & rocket salad
125 g Abergavenny goats cheese (or similar), crumbled

The second one is a 'Greek Style' style dish, so called because of the herbs and feta used,

Greek Style Roasted Mushrooms with Red Pepper, Herbs and Feta


Ingredients
low carb dish, makes about four servings
4 T extra virgin olive oil
2 T fresh mint, finely chopped
2 T fresh oregano, finely chopped (Other fresh herbs of your choice could be used.)
3 T fresh lemon juice (or less if you’re not a big lemon fan)
12 oz. jar roasted red pepper, drained well and diced into small pieces
1 pound fresh white or brown mushrooms
1/3 cup crumbled Feta cheese
salt, fresh ground black pepper to taste

Tomato Curry


Ingredients
Serves Four
900g large vine tomatoes
3 tbsp. vegetable oil
2 thinly sliced garlic cloves
2 tbsp. grated ginger
1 thinly sliced onion
1 de-seeded and chopped red chilli
1 tsp lightly crushed fennel seeds
1⁄2 tsp paprika
1⁄2 tsp turmeric
1 tsp ground cumin
1 tsp ground coriander
1 tsp tomato purée
12 curry leaves
100ml hot water
fresh coriander to serve

Tuesday Trio : Low Carb Recipe Suggestions (5)

It's Tuesday Trio Time
This week, I thought let's put the 'O' in November
and highlight some low carb Omelettes 

Seafood Omelette
It's fabulous, and ready-in-fifteen-minutes, a seafood omelette,
dressed in a creamy sauce, with garlic, fennel, and chili, a very nice mix indeed. 

Ingredients
Serves Two
2g carb per serving
2 tablespoons olive oil
5 oz. / 140 g cooked shrimp or seafood mix
1 red chili pepper
2 garlic cloves (optional)
½ teaspoon fennel seeds or ground cumin (if preferred)
½ cup / 120 ml mayonnaise
1 tablespoon fresh chives
6 eggs
2 tablespoons olive oil or butter

salt and pepper to taste

If you may be feeling indulgent you could always swap the shrimp for canned lump crab meat

Omelette with a goat’s cheese twist 
I just love the mix of eggs, chives and goats cheese,
simply served with a side salad. Yum !

3 eggs
Handful fresh chives, finely chopped
½ tbsp. olive oil

Omelette Greek Salad Style 
It's so easy to enjoy a taste of Greece in your own home with this recipe suggestion.
It's quick and simple, and can be enjoyed anytime!
I think you'll just love how the feta melts when put under the grill ... yum!

10 eggs
handful of parsley leaves, chopped (optional)
2 tbsp. olive oil
1 large red onion, cut into wedges
3 tomatoes, chopped into large chunks
large handful black olives, (pitted are easier to eat)
100g feta cheese, crumbled

Vegetable Frittata
This LCHF Vegetable Frittata is a great addition to any low carb recipe collection. 
If there are any leftovers - just keep them for tomorrow's lunch!
Ingredients 
Serves Four (but can easily be amended to suit)
1 cup Broccoli floweret's and stalk
1 cup Cauliflower floweret's and stalk
1 Zucchini (courgette) sliced into 2 cm slices
½ cup Mushrooms sliced (not too thinly)
1 small onion sliced into large pieces (quartered)
1 tbsp. Butter
1 cup Cream
4 Eggs
1 tbsp. Mustard, wholegrain (optional)
Salt and pepper
¼ cup Cheese, grated (cheddar works well)

perfect as a hearty breakfast, or a quick keto/low carb lunch or dinner.

Vegetable Packed Bobotie
This South African classic is a family favourite and a brilliant 'vessel' for secret vegetables!
This version is quite mild in flavour,
but you can always add a little more curry powder to spice it up should you wish.
Ingredients

5 tablespoons butter
1 onion, chopped
2 carrots, peeled and chopped
1 red pepper, seeded and chopped
1 cup grated courgette (zucchini)
1 tablespoon grated fresh ginger
3 cloves garlic, crushed
1 tablespoon mild curry powder
1 teaspoon turmeric
2 teaspoons ground cumin
2 teaspoons ground coriander
3 whole cloves
5 whole allspice
2 tablespoons honey (optional)
1 tablespoon red wine vinegar

Tuesday Trio : Low Carb Recipe Suggestions (4)

It's Tuesday Trio Time
and with the weather here in the UK being very Autumnal
it's a soup theme for this weeks choices

Soup au pistou with walnut pesto
A bowl of vegetarian deliciousness, this is a classic Provençal vegetable soup, with a rich,
earthy walnut pesto twist. Perfect for warming up these cooler Autumnal nights.

Ingredients
Serves Six
2.9g carbs per serving
For the soup
1 tbsp. olive oil
1 onion, finely chopped
1 carrot, finely chopped
1 celery stalk, finely chopped
1/2 fennel bulb, finely chopped
1x 31g pack basil stalks, finely chopped (reserve leaves for pesto)
3 garlic whole cloves
1 x 400g tin chopped tomatoes
200g (7oz) spinach, chopped
1 x 400g tin cannellini beans, washed and drained
1 1/4l (2 pints) good quality vegetable stock
For the walnut pesto
50g (2oz) walnuts, chopped
large bunch basil leaves reserved from soup
40g Parmesan
2 garlic cloves, crushed
125ml (4fl oz.) mild olive oil

Creamy Cauliflower Soup
There is nothing so welcoming as a bowl of warm tasting soup and this 'Creamy Cauliflower Soup'
is just so easy - it is rich, tasty and can make an easy option after a busy day at work or play.

2 cups Cauliflower flowerets
50 g Butter
½ cup Cream
1 Garlic clove
2 tbsp. Parmesan cheese (grated or sliced)

Avocado and Cucumber Soup
Just in case it is not very Autumnal where you live you may appreciate this suggestion!
Perfect for warmer days, the recipe combines avocado, cucumber and green onion.

Ingredients

12 oz. (English) cucumber, peeled, cut into 4 pieces
2 Fresh California / Hass Avocados, peeled, seeded, quartered
1 oz. green onion, cut into large pieces
2 cloves garlic, peeled
2 Tbsp. cilantro leaves, plus extra for garnish
4 Tbsp. fresh lemon juice
1 cup plain yogurt, plus extra for garnish
1 cup cold water or cold vegetable stock

Last year I did a series of posts called 'Tuesday Trio' and they were quite popular, so I thought why not add a few more this year! So without further ado here we go!

Cheese and Onion Pork Chops
Enjoy (British) pork with melted Cheshire cheese and a kick of English mustard.
This is such an easy dish, a family favourite!
Ingredients

4 pork chops
2 tsp olive oil
1 tsp English mustard
4 tbsp. caramelised onions, from a jar (make your own if preferred)
50g Cheshire cheese, grated

Courgette / Zucchini fritters ... with a red cabbage and beet salad
These courgette/zucchini fritters are a delight, and popular with vegetarians,
although you don't have to be vegetarian to enjoy this recipe suggestion!
Ingredients

1½ lbs / 700g courgette/zucchini
2 eggs
1 cup / 225ml grated/shredded cheese
2 teaspoons ground psyllium husk powder
1 teaspoon dried mint
1 teaspoon onion powder
4 tablespoons light olive oil or coconut oil

3½ oz. / 100g red cabbage, grated/shredded
3½ oz. / 100g beets, thinly cut
2 tablespoons fresh parsley

This low carb citrus custard dessert, or posset recipe,
is a conversion of the classic British custard recipe.

1/2 cup of sugar substitute (e.g. Swerve)

2 tablespoons of lime juice
½ teaspoon of orange extract

Somehow the colour is just right for Autumn, and they are simply delicious.

A gorgeous pairing of two delicate flavours - sweet and juicy melon with smoky slices of Parma ham.
This makes a great starter dish for a dinner party, but could also be enjoyed as a light lunch.

Celeriac Remoulade with Charcuterie
Light lunch, or an easy starter, these simple winter flavours combine well and make a colourful dish.
The remoulade, uses celeriac, carrot, and fresh dill. Serve it with some charcuterie.
You may find that many supermarkets have an even better selection at this time of year!

It's Tuesday Trio Time
and it features low carb vegetable side dishes,
though some may prefer to serve them as a main - the choice is yours.

Roasted Vegetables Tricolore
This is a beautiful, and most colourful, side dish. Easy-to-make with lots of good flavour.
Choose to serve it with either meat, chicken or fish ...
But perhaps if you just like vegetables, enjoy the dish by itself!

Ingredients
Serves Four
6g carbs per serving
300 g brussels sprouts
150 g cherry tomatoes
150 g mushrooms
2⁄3 teaspoon sea salt
1⁄3 teaspoon ground black pepper
2⁄3 teaspoon dried rosemary or dried thyme

Celeriac and Walnut Gratin : Vegetarian 
This dish does make a great vegetarian main meal, or you can have it as a side dish

1 large celeriac
2 tbsp. walnut oil

100g blue cheese, such as Bleu d'Auvergne or Stilton
(* you can also reduce the amount of vegetable stock slightly and add crème fraiche,

This is a wonderfully green, crispy and crunchy low-carb side dish.
Green beans always go great with a nice Sunday roast, or perhaps a Thanksgiving, or Christmas turkey!

Low Carb Christmas Pudding
many may say this is the best low carb Christmas Pudding ...ever!

Ingredients
100 grams ground almond flour
1 teaspoon baking powder
2 large eggs
1 tablespoon of melted butter
2 tablespoons of double (heavy) cream

100 grams of low-carb thawed frozen fruits. 
(Blueberries, blackcurrants and strawberries)
60 grams of 90-95% cocoa dark chocolate
Two tea spoons of cocoa powder
One large shot of brandy
A handful of almond flakes and broken walnuts
Extra thick cream

Mince Pies, the low carb way
I'm told Father Christmas Loves Them!


Ingredients
Mincemeat
50g fresh or frozen cranberries
75g (its about ½) Bramley apple
25g chopped walnuts
1 tbsp. coconut oil
1 tbsp. ground almond
2 tbsp. erythritol (or any other sweetener of your choice)
2 tbsp. brandy
1 tbsp. freshly squeezed lemon juice
1 tsp. lemon zest
1 tsp. orange zest
1 tsp ground cinnamon
½ tsp ground ginger

Pinch of ground nutmeg
Pinch of ground cloves

100g ground almond
15g coconut flour
15g soy flour
1tbsp arrowroot starch

Luxurious Low Carb Christmas Trifle
a very tasty low carb trifle, it’s quite a favourite with us and the family


Ingredients
Serves 6-8
100 grams of ground almonds
1 teaspoon of baking powder
2 large eggs, beaten
1 tablespoon of melted butter
2 tablespoons of double (heavy) cream
A 500g pack of frozen low-carb summer fruits ... thawed

(I use ones that are 4.1g carbs per 80g serving)
300ml of extra thick cream
A handful of toasted flaked almonds
2 x 12.5 grams of instant raspberry, sugar free, jelly crystals
