This dish does make a great vegetarian main meal, or you can have it as a side dish - the choice is yours dear reader.
Serves 4 - 6
1 large celeriac2 tbsp. walnut oil
300ml vegetable stock*
handful chopped walnuts
100g blue cheese, such as Bleu d'Auvergne or Stilton
Heat oven to 190C/fan 170C/gas 5.
Peel, quarter and very thinly slice the celeriac - this is best done with the slicing blade of a food processor.
Toss in the walnut oil, salt and pepper, and spread over a gratin dish.
Pour over the stock and bake for 40-45 mins, then sprinkle with the walnuts, crumble over the cheese, then cook for 15 mins until crisp and golden.

* you can also reduce the amount of vegetable stock slightly and add crème fraiche... it makes for a slightly creamier texture.

Oh, yes please! Hugs, Valerie
That does sound good.
The celeriac I can find here tastes very similar to celery. This sounds good, but I wouldn't go to the trouble of finding my missing slicing blade for my food processor. I have copied the recipe, though, in case I ever find my blade. And thanks for sharing this recipe, too.
...a good fall dish.
It looks very tasty. Another one to try.
This looks good!
This dish sounds really unique and healthy! Definitely something I would like to try.
Interesting combination of ingredients. Sounds great. Thanks, Jan!
That looks pretty good!
I made this today to eat with roast chicken - delicious!
I partly cooked the celeriac and used creme fraiche for the sauce. Walnuts make it that bit different. They go so well with the celeriac.
Not something I've ever tried before but I'll try anything once. Sounds interesting.
Um prato delicioso.
Um abraço e bom Domingo.
