Lemon Coconut Pound Cake : Low Carb - Gluten Free - Sugar Free


Did you know that a Pound cake is a classic American plain cake similar to an English sponge but with a slightly denser texture. However, this Lemon Coconut Pound Cake I share here is made entirely grain free, sugar free, gluten free and low carb! It's a recipe suggestion from Brenda at Sugar Free Mom blog.

Ingredients:
Serves 14
2 cups coconut flour
1 cup unsweetened shredded coconut
1 cup Swerve sweetener
1 1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
8 eggs
1 cup butter room temperature
1 cup sour cream
1 1/2 cups heavy (double) cream
3 teaspoons lemon zest
1 tablespoon vanilla extract
1 teaspoon coconut liquid stevia or lemon liquid stevia

optional topping: unsweetened coconut flakes 

If you are not a fan of coconut you can make this pound cake more lemony with some adjustments …

Sounds good and looks good. YUM..... AND--it's healthy!!!!! Yeah.

We just got home from a 12 day (5000 mile) trip in the car to South Dakota, Montana and Wyoming... It was MARVELOUS. I'm sure I'll have lots of pictures to share... ha
