60 ml (32 g) powdered erythritol
2 tbsp coconut flour*
1 tsp white wine vinegar
½ tsp baking soda
Filling
110 g butter, softened
1 tbsp ground cinnamon
60 ml (32 g) powdered erythritol

*Different brands of coconut flour may contain widely varying amounts of carbs, depending on the fibre content. This recipe uses the nutritional information for Amanprana Coconut fibres/coconut flour, which is really low in net carbs.

ReplyDeleteit is hard to believe they are delicious without sugar. we don't eat them too often because i add sugar when i make them, in the icing as well. maybe they don't have to be a sugar bomb, that's what we usually call them!!

ReplyDeleteWhat an interesting recipe! To make grain-free and low carb and yet taste like cinnamon rolls must be such a treat I'm saving this on my low carb Pinterest board to try it. I'll have to look for some of the ingredients at my health food store.

For some reason, when I just get right into it and only wash my hands to prepare, it seems like a job rather than an experience. I find when I take the time to put on an apron, it all seems so much more fun and exciting. Probably not the right description but it does seem to make it more rewarding..Stay well..xxoJudy
