This post concentrates on Red bell peppers which taste delicious however you eat them, and they are quite versatile too. ReplyDeleteI used to make these for my ex when we were married. I think I have made them once since. I enjoyed them but when I had acid reflux the peppers gave me heartburn. Maybe now I need to try them again.

ReplyDeleteRed and green peppers are very popular for stuffing here. I like them too, but I'm worried because of their size. I\m afraid they're genetically engineered as they are all big. Hard to find small to medium peppers at our grocery stores.

Anyway, now I made a bell pepper casserole. All of us love it...and two or three of the kids friends back in their high school days loved it, too.

We eat stuffed peppers quite frequently, especially when fresh produce is available locally. We have several variations of vegetarian fillings, all delicious, a couple Asian flavoured. It doesn't get much healthier than this!
