This is such an important topic, Jan! James makes some really strong points about gluten and all those potential symptoms. It's wild to think how much modern wheat might be impacting our health. Those gluten-free recipes sound delicious, especially the Rosemary and Thyme Loaf.

I try to only eat healthy carbs that have a good amount of fiber.
I have been gluten-free for over 20 years. I should have been for much longer but no one knew then.

I really appreciated your post here, Jan. I recently made a discovery on my own regarding this subject and I plan to do a blog post about it soon.
Since the 1st week of July I haven't been eating food containing wheat flour, such as pizza, breads, pasta, etc. I felt bloated, so I decided to gave off gluten for a while. As soon as I eat food containing wheat flour next week, breakfast and meal will be balanced in terms of gluten.
Bloating and gas is a problem for me, thank you for the information.
I have cut out just about all gluten.

I have read that before, about 10 years ago I did go off all of that for a month and then gradually introduced it back in to my diet, but do you think I can remember how I felt. I guess it wasn't enough of a change that I realized but probably wouldn't hurt doing again.

This is such an important topic to be aware of, as so many of us have gluten problems these days. Looking for healthier alternatives to processed and refined foods has to be a good way forward even if we are not gluten intolerant.
