Before I start this post, I want to say THANK YOU to all readers who visit this blog, and a special thank you for all who take time to leave a comment. It is lovely to receive, read and share your thoughts, comments and good wishes.

~ Midweek Meal Choices ~
here are three to consider

see recipe here

Cod/White Fish Parcels Steamed - With Fennel and Herbs
see recipe here

Aubergine / Eggplant Parmigiana

I hope you may enjoy one of these suggestions
If you should need help with weight/measurement conversion - see here

You will find a variety of recipe ideas within this blog, and not all may be suitable for you. If you may have any food allergies, or underlying health issues these must always be taken into account. If you are a diabetic and not sure how certain foods may affect your blood sugars, test is best, i.e., use your meter. If you have any concerns about your health, it is always advisable to consult your doctor or health care team.

All the best Jan

These all look great. I've been on a pea eating binge lately so that first dish is really making me hungry. :)

The chicken and mushrooms looks good but I'd swap the peas for broccolini.

Oh Jan, Parmigiana is a dish full of antioxidants from the eggplant, tomato and olive oil. Thank you for sharing the recipe of that Italian dish.

Have a lovely Wednesday,

we would eat and love all three of these but the cod sounds especially delicious. little story about me...i won't eat peas. when i was a child, i did not like them and my father made me eat them. my parents were very strict and i could not be "excused" from the table until i ate them. i would literally gag, but still he made me eat them. i made a promise to myself back then, that i would never eat peas on my own and i have kept that promise. i don't even remember what they taste like!!

I just went and got some groceries, nothing will be as great as these meals, but hubby doesn't complain so that is good :)

Confesso que não gosto de bacalhau. Mais, berinjela eu gosto muito. Nunca comi Berinjela à Parmegiana. já fiz até Caponata de Berinjela.
