This recipe is an easy-going, vegan/vegetarian, slow-cooked summer vegetable stew. Serve as a main course with crusty bread to mop up the juices, or as a warm salad along with other sharing plates.

Hello Jan, the colours and presentation are lovely!
Gracias por la receta. Te mando un beso.
I do like Lima beans ( I think you call them Butter Beans).
I was thrilled to see butter bean as a ingredient! Not many people use that and it makes any dish interesting.
A favourite meal of mine!
Excellent recipe...like it was written for me, I love soups like this with vegetables:)))
Must be a treat for veggie lovers.
Looks yummy
Looks really lovely, Jan.
I love that vegetarian meal. Yesterday I had a strew like that one. Local farmers can supply fresh beans in summer.
The stew look delicious and healthy!
Take care, enjoy your day!
Looks so good and refreshing
When the weather is really hot we prefer a lighter meal. This looks delicious.
God bless.
Yummy! This looks delicious, Jan. I will save the recipe.xx
Lovely ingredients for a tasty meal, and simple to prepare, too.
I do love my slow cooker and this looks like a great way to use it!
I'm making Ciambotta today. I thought of trying it in the crockpot, but I'm afraid the veggies will get too, what's the technical term? Ah, mushy
Muy rico Jan. Ahora con el calor me gustan las legumbres en ensadaladas.
Un abrazo.
I am liking the idea of using the slow cooker in the summer. Thank you for sharing fun ways to use the summer goodness of the garden. :-)
Oh my goodness this sounds good and I'm all about crock pots:) Have a splendid day, Jan.
I love easy meals that you can just set and forget. I wish my husband loved them as much. LOL!
As soon as I can eat regular food again, I'm going to make this. Looks so good.
I have all the herbs and peppers in my garden and I just bought garlic this week. I think I'm ready to make this. Thanks for the recipe.
I have been enjoying various types of beans recently, Jan, and this recipe looks like a great use for summer vegetables as well. Also with the hot weather using a crockpot is the best way to prepare a meal and with leftovers is even better!
It is so hard figuring out meals over and over. This is a good idea.
This looks very tasty. I love the variety of veggies in it!
