A Trio For Tuesday : Fish - Chicken - Greek Cauliflower Rice Salad

Although the post title is 'A Trio For Tuesday' these three meal suggestions could be enjoyed any day of the week! In fact I think I may be having the Mediterranean Roasted Cod this coming Friday!

Mediterranean Roasted Cod


Ingredients
Serves Two
1 lb cod, boneless fillets
4 oz. cherry tomatoes, preferably on the vine
1 garlic clove, sliced
4 tbsp olive oil
salt and ground black pepper
1 tbsp small capers
1 tsp fresh thyme leaves
½ tsp chili flakes
1 tsp freshly squeezed lemon juice
½ tsp lemon zest
Tip
Take the fish out of the fridge 15-20 minutes before cooking.
This will take the chill off and allow it to cook more evenly.

Mustard and Sage Chicken with Celeriac Mash


Ingredients
Serves Three
1 celeriac, peeled and cut into chunks
3 chicken breasts, skinless
1 tbsp. English mustard powder
2 tsp olive oil
2 garlic cloves, crushed
8 sage leaves, chopped
100g low-fat crème fraîche, plus 2 tbsp. for the mash
1 chicken stock cube
2 tbsp. wholegrain mustard

275g cooked green veg, such as thin-stemmed broccoli, peas or Savoy cabbage,

Greek Artichoke Cauliflower Rice Salad


Ingredients
Serves Four
12 ounces riced cauliflower
1 14 ounce can Artichoke Hearts
1 cup grape tomatoes sliced
1/2 large cucumber sliced
1/4 cup olives
1/2 bell pepper (red or orange)
1/4 cup olive oil
1/2 lemon juiced
1 clove garlic minced
salt and pepper to taste
fresh parsley chopped, for topping (optional)
