Ingredients:
100g ground almonds
1 teaspoon baking powder
2 large eggs
1 tablespoon of melted butter
2 tablespoons of double cream
2 tablespoons of cocoa powder
100 grams of pitted black cherries
Method:
Mix all dry ingredients in a bowl.
Melt the butter I used a Pyrex jug, add the eggs, cream, then add the dry ingredients and mix. Pour into a 6" microwave proof dish. Microwave in a 700watt for 3 minutes. Allow to cool and cut in half. Spread on extra thick cream and 100 grams of pitted black cherries.. Serves four.
Lowcarb hard to stick to, give me a break.

Pity Defren didn't see this before she started doing a song and dance about eating two hot cross buns. Lordy, Lordy what a palavar that needed 28 posts on ETYM. Get a grip Defren, you bought them for the family.
One minute carbs are poison and next they are being eaten.
ETYM has become another fantasy island place. It’s not a forum it’s a blog for about a dozen people. As a diabetes facility it is a none runner. Week after week the only newbie’s are spammers, most being banned within a day of becoming the latest member. As xyzzy says it takes time, how long ? If no one joins it will take forever to get err…...nowhere.

One of my favourite low carb cakes and yes definitely better for diabetics than hot cross buns !
There are some great low carb recipes around and most are quite easy to make.
