Good Food - Pork Medallions with low carb vegetables




From time to time pork medallions are on my shopping list. We enjoy them served with a selection of low carb vegetables, as you can see from the picture above. Pork medallions, cheese stuffed mushroom, asparagus tips with a big knob of butter, mashed swede and carrot, and a few roasted celeriac bites - less than 15 carbs. 

'Pork fillet medallions and loin medallions are becoming more widely available in supermarkets, but if you can’t get hold of them then choose a pork steak instead. You can either cut the fat off to get a medallion or cook it as it is and all our recipes work for loin steaks too, see recipes and read more about pork medallions' here

You will find a variety of recipe ideas within this blog, but please note, not all may be suitable for you. If you may have any food allergies, or underlying health issues these must always be taken into account. If you are a diabetic and not sure how certain foods may affect your blood sugars, test is best, i.e. use your meter.

I love those pork medallions. Always reasonably priced when you feel like some chops and they are too expensive.

I must admit that I've never seen pork medallions being sold. We did have pork chops with veg for dinner last night though.

looks delicious. We recently brought a loin and then cut them into medallions--a little cheaper but we ate more!

I would very happily eat all of those veg. Himself would happily eat the pork medallions. I think this makes us a version of Jack Spratt and his wife.

I made almost the identical meal one night earlier this week! I did add a side of brown rice though...but had asparagus and mushrooms~

Thank you for this. I am type 2 diabetic. I've been on the KETO diet for about 2 months now and have lost 30 lbs. I still have a hard time with giving up drinking pepsi or coke. I'm just done with being a diabetic (and it's only been 2 years)

I have such a hard time with my diet. When I eat what I should my numbers go up. When I am not so careful my numbers go down.
I am with @Christine, I have only been a diabetic for almost two years and it is bonkers.
