Serves Six
1 large cauliflower, cut into florets
1 head broccoli, cut into florets
50g/1¾oz butter, plus extra for cooking the leeks
baby leeks (approx. 150g/5½oz), sliced
500ml/18fl oz milk
4 tbsp flour
200g/7oz mature cheddar, grated
6 tbsp fresh breadcrumbs
salt and pepper
1 large cauliflower, cut into florets
1 head broccoli, cut into florets
50g/1¾oz butter, plus extra for cooking the leeks
baby leeks (approx. 150g/5½oz), sliced
500ml/18fl oz milk
4 tbsp flour
200g/7oz mature cheddar, grated
6 tbsp fresh breadcrumbs
salt and pepper
Method
1. Preheat the oven to 220C/200C Fan/Gas 7.
2. Cook the cauliflower and broccoli in boiling water for 5–6 minutes until just tender. Drain well and tip into a deep baking dish.
3. Melt a knob of butter in a frying pan and fry the leeks for 3–4 minutes, stirring frequently until softened. Arrange them in the dish with the florets.
4. Heat the milk, flour and butter in a saucepan over a medium heat, whisking constantly until the sauce comes to the boil and thickens. Reduce the heat and whisk over a low heat for 1–2 minutes. Remove from the heat, stir in 150g/5½oz of the grated cheese and season to taste.
5. Pour the sauce over the vegetables and sprinkle over the breadcrumbs and the remaining cheese. Bake for 20 minutes or until the top is golden brown and bubbling.

This sounds delicious!
...a great autumn/fall dish.
Gracias por la receta. Te mando un beso.
Jan, It is great to see your new posts! I happened to see your comment on Baili’s blog and came right over to The Low Carb Diabetic. 😊 I still need to take a look at your new posts the last few days. This cauliflower, leek, and broccoli cheese gratin looks absolutely delicious. What a great combination. And, I love just about anything “gratin”. 😊 Really, really great to see you back! Blessings and best wishes to you from Seattle! Your friend across the pond, John
It is very tasty, indeed!
This recipe will definitely be on my meal plan next week :) Thank you, Jan.
YUM.
That does look wonderful Jan.
I often make one of these mainly in winter but don't use leeks, just a bit of onion. I also don't cook the broccoli or cauliflower before the oven as I prefer both to be a bit on the hard side. Each to his own.
I would enjoy that with a crisp salad. 😀
It has to be very tasty, vegetables and an apparent recipe easy to make, you will have to try.
Best regards
Sounds delicious! Another great recipe!

This looks and sounds delicious. I'm for anything with cheese.
That looks delicious to me. And great for a cool evening too.
I would serve that as a supper dish with some crusty Irish soda bread and creamery butter. Delicious!
This would make a nice change of pace
Oooh, that looks yummy! I will definitely make it!
This does look good. :-D
Thanks for the info on the water fasting. I know it isn't suitable for certain people with certainly health issues. I managed fine with not issues, I think that proved to me I must be fairly healthy at least! The one thing I did get from it was that I can survive 3 days without food but not water, it just shows how very important water really is for us humans.
Yummy, sounds great.
The addition of leeks sounds lovely to this gratin. It would be nice to serve for dinner. Thank you Jan!
It may taste good but I'm not a fan of the ingredients except for the cheese... That is something that I would have to eat without knowing what's in it ..lol
The best Jan, I love it.
This sounds very similar to a dish with just broccoli that I found many years ago in a British cookbook (I think it was called The Dairy Cookbook) and which became a family favorite. I still make it regularly. Maybe I will change it up a bit in the future. Thank you, Jan, for sharing. All the best - Carola
That sure looks tasty. Hope you're doing well.
I would definitely try this.
That looks delicious!
hubby would probably like this, something different from what I usually make!
I tend to forget I could put broccoli and cauliflower in recipes. I usually steam them or eat them raw.
Love me some cauliflower.
Sounds good.
Me gusta mucho la coliflor, también el brócoli. Besos.
All vegetables used are so good yummy
I think recipe is very nice. Thanks
