Cauliflower Tabbouleh with Halloumi Cheese : Low Carb, Gluten Free


This recipe suggestion is a gluten-free and low-carb variant of tabbouleh using grated cauliflower instead of bulgur, it's served with freshly fried halloumi and a creamy sauce which gives a good touch of spiciness...

Ingredients:
Serves Two
13g carb per serving
7 oz. (200g) halloumi cheese
1 tablespoon olive oil
3 oz. (75g) baby gem lettuce or Romaine lettuce
2 tablespoons pistachio nuts (optional)
salt and pepper, to taste


Low-carb tabbouleh
9 oz. (250g) cauliflower
1 tomato
½ cup (125ml) fresh parsley
2 scallions (spring onions)
4 tablespoons olive oil
2 tablespoons lemon juice
½ tablespoon dried mint
salt and pepper, to taste


Creamy sauce
1⁄3 cup (75ml) sour cream or Greek yogurt
½ tablespoon tomato paste
1 teaspoon ground coriander
¼ teaspoon cayenne pepper
salt, to taste


Tips
This refreshing salad also works great as a side dish for grilled chicken, lamb or beef.
If you are having a barbecue ... why not fry the halloumi on the grill, it will be even more delicious.

Halloumi is a firm, slightly springy white cheese from Cyprus, traditionally made with sheep's milk, although these days mass-produced varieties often use cows’ milk. In texture, halloumi is similar to a firm mozzarella, making it a popular ingredient in Middle Eastern cooking. Unlike mozzarella, however, it has a strong salty flavour, particularly when preserved in brine.

Sounds great. I did eat Tabouleh off and on before going Keto. I'll have to try this. I have a bar o f Halloumi in the fridge I haven't tried yet either. Don't know what I'm waiting for. I hope you are having a great week.

If do love cauliflower anything but would have to adapt this one. Haloumi is just tooooo salty for me.

I am so glad to read about this cauliflower dish. I have been eating cauliflower for days, after I bought two big heads. This sounds wonderful. I even have the yogurt, romaine lettuce, and the pine nuts, but I may have to substitute the cheese. Thanks for the recipe, Jan.

Yes halloumi can be quite salty and not to everyone's taste ...
With this recipe the cheese needs to be one you can fry or throw on the grill. Here are five alternative delicious cheeses, but again it will depend on individual taste, I always think it's worth experimenting.
