I do find that Chicken's many plus points - its versatility, as well as the ease and speed with which it can be cooked - make it one of the most popular meats around. It has a high level of good quality protein, as well as B vitamins, iron, copper and selenium. I also find that it's usually very reasonably priced …

This blog brings a variety of recipe* ideas, and it is important to note, not all may be suitable for you. If you may have any food allergies, or underlying health issues these must always be taken into account. If you are a diabetic and not sure how certain foods may affect your blood sugars, test is best, i.e. use your meter.

All the best Jan

Chicken is such a versatile meat. I can remember when it was only served on 'high days and holidays'. I am glad the price has come down - and the meat eater in our house has it often.

The chicken caprese looks really yummy! I think so many people are trying to cut back on carbs because so much food is loaded with them. Time to get back to better eating habits. Hugs-Erika

Hello, and many thanks for your comment.
Yes, the 2nd and 3rd suggested recipes do use rotisserie chicken, which many find is a budget-friendly and delicious way to feed you and your family, especially if you are looking for quick and creative ways to use it.

However the first recipe uses chicken from scratch and there are many more that do so too, take this one for example, tasty chicken with a herb butter, find it here:
https://www.dietdoctor.com/recipes/keto-chicken-herb-butter

Once again, thanks for your comment.
Wishing you a happy Friday and weekend.

All the best Jan

Hi Jan, thank you so much for your comments on my blog, and for pointing out that some were missing. I went and had a look and there were loads in a pending file that I'd forgotten I had! There was also lot of spam from numpties but that went straight in the bin! Have a lovely weekend if it ever stops raining, Sue xx

Hello Sue
Many thanks for checking, and I've been over to your blog and thanked you there too :)
You sometimes never know because there can sometimes be glitches on blogger.

I think many of us experience spammers, that is why we have comment moderation on.

Yes, we too have rain at the moment, but the garden is welcoming it …
Enjoy your Friday and have a great weekend.

All the best Jan

Most of the meat we eat these days is chicken, and even of that we eat far less than previously. We have cut out red meat entirely and eat pork more infrequently and with small portions when we do. So these three recipes fit right in for us.
