Chipotle Chicken ... how about serving it with cauliflower rice !

How about this idea for a quick, easy and tasty dish. Perfect for a mid-week, or Saturday night dish ... but hey ... I'm sure it could be enjoyed any day of the week. We often enjoy chicken thigh fillets, sometimes with the skin on, sometimes with it off! This recipe is for skinless chicken thighs - have a read and see what you think.

Serves Four
1 onion, chopped
1 garlic clove, sliced
2 tbsp. sunflower oil
1-2 tbsp. chipotle paste
400g can chopped tomatoes
1 tbsp. cider vinegar
8 skinless chicken thigh fillets
small bunch coriander, chopped
to serve soured cream and rice,
or a lower carb alternative try cauliflower rice / cauliflower couscous

1. Fry the onion and garlic in the oil in a deep, wide frying pan until soft. Add the chipotle paste (use 1 tbsp. for a mild flavour and 2 tbsp. for a hotter, stronger one). Stir and cook for 1 min, then add the tomatoes and cider vinegar. Bring to a simmer and cook for 10 minutes with the lid half on. Stir to make sure it doesn’t get too dry.
2. Add the chicken and cook for 10 minutes or until cooked through, turning once. Scatter with coriander and serve with either rice and soured cream, or the lower carb alternative cauliflower rice/couscous.

Chipotles are dried, smoked jalapeno chillies. Blended with tomatoes and onions, they make a really convenient paste that can easily be stirred into dishes to add a smoky flavour and kick. Use in marinades or to flavour dips - try stirring into soured cream, starting with just a teaspoon and adding more if you need to. There are different brands to choose from in your supermarket. I always check the labels to get the lowest carb content I can ...

That looks lovely. I don't think Mick would go for it but it's certainly something for me and Eleanor to try when she's home from uni.

I'm not a fan of chicken, and really don't like dark meat, but I like the rest of the ingredients, so may find a healthy vegetable to replace the chicken thighs. Thanks for the recipe, Jan.

I forgot to tell you, I tried the Creamy Tuscan Shrimp two nights ago and it was absolutely fabulous.
