Creamy Chicken Casserole : A LCHF Family Favourite

LCHF stands for low carb, high fat ... although some also use the term healthy fat, and there are many articles with more details about this... take these two for instance ... here and here

"Do you want a low-carb recipe for the entire family? Here’s a perfect all-in-one dish with a delicious taste of pesto, leeks, cheese and cream. Well-liked by both little ones and adults!"

Serves Four : 7g carb per serving
2 lbs (1 kg) chicken thighs, skin on
8 oz. (200 g) shredded (grated) real cheese

10 oz. (300 g) frozen cauliflower florets (or fresh)
1 leek, chopped
4 oz. cherry tomatoes
2 tablespoons green pesto (choose a low carb one, check contents)

3 tablespoons butter
Salt and pepper

Hi! Jan from your team visited my blog today to leave a sweet message. She did not have a return address, so I wanted to stop by and say THANK YOU so much for your thoughtfulness and prayers! It means so much! (your website looks yummy!)
