Vittoria tomato tricolore salad : Perfect for summer and it's LCHF


Vittoria Tomatoes are vine tomatoes grown in Sicily, the plants are watered with sea water. The tomatoes are given a long ripening period on the vine to allow a depth of flavour.

Arranged on a plate like this with some avocado and mozzarella, I could just pick one up and taste it now ... how about you?

If you'd like to enjoy a taste of summer here are the ingredients you will need:
Serves Four
270g Vittoria tomatoes
1 extra large ripe and ready avocado
8 slices of buffalo mozzarella
2 tbsp extra virgin olive oil
6-8 fresh basil leaves


Here is what you need to do:

1. Remove the tomatoes from the vine and wash. Drain and cut into halves.
2. Slice the avocado into long strips and layer on a large serving dish. Arrange the mozzarella slices around the avocado. Scatter the cherry tomato halves over the plate.
3. To serve, drizzle with olive oil and season. Tear the basil leaves and sprinkle on top of the salad.


Each serving provides:
3.1g carbohydrate 0.2g fibre 6.1g protein 23.0 fat

Oh, the salad looks wonderful and so easy! It would be lovely for our "tricolore moment", the match between Italy and Sweden will begin in an hour. :)

Fabulous. I'd leave the avocado out but possibly substitute it with cucumber.
