Arranged on a plate like this with some avocado and mozzarella, I could just pick one up and taste it now ... how about you?
If you'd like to enjoy a taste of summer here are the ingredients you will need:
Serves Four
270g Vittoria tomatoes
1 extra large ripe and ready avocado
8 slices of buffalo mozzarella
2 tbsp extra virgin olive oil
6-8 fresh basil leaves
Here is what you need to do:
3. To serve, drizzle with olive oil and season. Tear the basil leaves and sprinkle on top of the salad.

3.1g carbohydrate 0.2g fibre 6.1g protein 23.0 fat

1. Remove the tomatoes from the vine and wash. Drain and cut into halves.
2. Slice the avocado into long strips and layer on a large serving dish. Arrange the mozzarella slices around the avocado. Scatter the cherry tomato halves over the plate.3. To serve, drizzle with olive oil and season. Tear the basil leaves and sprinkle on top of the salad.

Fabulous. I'd leave the avocado out but possibly substitute it with cucumber.
3 of my favorite foods, i could live on this!!! i like a little white balsamic vinegar with it as well!!!
