Avocado Boats : Easy as One, Two, Three !

Take three easy Avocado Boats
which one will you choose?
This is recipe heaven for those who don’t like to cook.
Healthy easy avocado boats filled with tuna mayo, a baked egg with bacon bits, or prawn cocktail.
It's keto, paleo, low carb heaven! Just delicious and nutritious!

Ingredients
all recipes below - serves one

Tuna Mayonnaise
1/2 avocado
50 g tinned/canned tuna drained
3 tbsp. mayonnaise



Baked Egg With Bacon & Chives
1/2 avocado
1 egg
2 tbsp. cooked bacon pieces
1 tbsp. fresh chives chopped



Prawn Cocktail
1/2 avocado
50 g prawns pre-cooked
3 tbsp. mayonnaise
2 tsp tomato paste
pinch chilli optional

All three look scrumptious! I love stuffing my avocados with things like almond butter and real bacon bits as well as tuna, egg salad, or just EVOO. I'm waiting for two to ripen. I do not have luck with avocados; either they are spoiled or too hard and it takes so long sometimes to get them to ripen that I can't eat them all before they spoil. Often best for me to buy prepackaged guacamole for an emergency avocado fix. LOL Have a great day.

We eat avocados every way imaginable. One of our recent practices came from a friend in Brazil. You simply cut the avocado in half, remove the pit, whip up the pulp and add your favourite sweetener - we use maple syrup. Delicious for dessert.

You had me salivating until that last one. No prauns, thank you. =) I can't wait to share these with my hubby. Replace the mayo with greek yogurt, and he'll be sold. Awesome. Now we just have to find some reasonably priced avocados, or grow and avocado tree. ;)

Such a great idea for avocados! I don't like mayonnaise but I wonder if I could use plain yogurt instead.

Yes, I think you could use yogurt instead. I would suggest using yogurt in equal measures as a substitute for mayonnaise. Some recipes adapt very well, so give it a try and perhaps let us know!
