For something a little different how about this deconstructed cheeseburger! It's been re-assembled into a low-carb casserole! It has ground/minced beef, some cheese, onions, pickles, tomatoes and Dijon mustard - with the cauliflower serving as the bun - well sort of! LOL!
Ingredients:
Serves Four
12g carbs per serving
1 lb / 450 g cauliflower
2 tablespoons olive oil
2 tablespoons butter
1 yellow (white) onion
1 garlic clove, minced
1 lb / 450 g ground/minced beef
2 tablespoons tomato paste
14 oz. / 400 g canned whole tomatoes, drained
1 tablespoon Dijon mustard
2⁄3 lb / 300 g shredded (grated) cheddar cheese
salt and pepper
Serving:
2 dill pickles
51⁄3 oz. / 150 g lettuce
4 tablespoons olive oil

What a great looking dish, thanks for sharing the recipe. Greetings!
Sounds good Jan. I love using cauliflower and broccoli as replacements for carbs!
I like this idea! Thanks for the sealegs info yesterday, didn't realize it contains sugar and a whole lot of additives!
I'd much rather have the cauliflower than an actual bun. This actually looks delicious. When I come here, I want to give up my vegetarian ways the recipes look so delicious. This one has my mouth watering.
Hello, my hubby would love this or anything with cheeseburger. Thanks for sharing.
Happy Monday, enjoy your day and new week!
Looks good! This is another recipe I need to try.
looks yummy!! cauliflower is the new potato or pasta!!!
It does sound delicious.
That's definitely something a little different, it's nice to have something new to add to the menu.
Looks delicious.
Sounds and looks tasty Jan. My hubby cannot have to much tomato in his meals. It drives his sugar levels up. As you always say check those suger levels and eat what works for you!
Hugs 💮
Will it still be tasty if you skip the oven? I´m always afraid of burning myself...
Yum, this looks great. I made the bacon burger casserole the other week but I think this looks better.
Iris asked - "Will it still be tasty if you skip the oven? I´m always afraid of burning myself..."
Hello Iris
The original recipe suggestion is to finish cooking in the oven.
However, why not try finishing the cooking on the hob, obviously using a hob-proof casserole type dish. The oven temperature stated is 400F 200C Gas Mark 6 which is a fairly high setting, so depending on your hob you may have to have a trial and error session first...and of course always make sure everything is properly cooked.

This looks so delicious - I can almost taste it! I have cauliflower in the fridge right now - need to try this recipe! Hope you are having a good week and some lovely fall weather. xx Karen
...a nice quick dinner.
I would love this meal, minus the pickle... it's just not one of my favorite flavors... but the rest of it together would be so tasty ... what a great way to get more veggies with the cauliflower... xox
Although I don't eat meat anymore- I did once love hamburgers and this sounds very tasty. :) Thanks for sharing!
