Diabetes and the Alternative Lower Carb 'Rice Pudding'

Did you know that in a fairly typical 'old fashioned rice pudding' there are over 40g carbohydrate (carbs) per serving. If you are a diabetic, eating this amount of carbs, many would find their blood sugar readings going 'high' ... as your meter would show! Many Type 2 (and Type 1) diabetics exclude rice from their menu plans because of this reason ... elevated blood sugar readings are the last thing a well controlled diabetic would want. So if you are diabetic, or indeed like me a non-diabetic but choose to live the LCHF lifestyle - what do you do?

Well, for many of the higher carb foods there are excellent alternatives, and you can swap many foods e.g. pasta for courgette, tacos for lettuce etc. Now, if you may be looking for a low carb (alternative) version of 'rice pudding' then look no further. Diet Doctor site has this super 'creamy low carb "rice" pudding, pictured above. With just a few ingredients, it makes an amazing low carb version of the classic rice pudding. Make serve and enjoy it all year round!

Ingredients
Serves Six
just 6g carb per serving

300 g cottage cheese
300 ml heavy (double) whipping cream
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
60 g fresh raspberries or other berries of your liking

Delicious served with red berries of your choice, or why not try a few wedges of a clementine ...

A reminder
Just look at the difference in carb count:
6g per serving in the low carb version
40g per serving in the 'old fashioned' version

My husband and I have been doing the LCHF for a while now, and we feel so much better. I've also seen a lot of recipes with cottage cheese - it really does taste delicious! I have replaced cauliflower in our diet, instead of potatoes for soups. It really makes a huge difference! Congratulations on being #17 in the top diabetic websites, that is an incredible milestone, and you have put a lot of work into this beautiful blog! Many blessings to you both!

Are you allowed to eat chia seed? Makes for a great pudding and works well in overnight oats. I make it all the time. So good.

Rice pudding is tasty but I like cottage cheese and I want to try this recipe only we're trying to keep our weight down and whipping cream is anything but low calorie. Light Cool Whip, maybe?

Yes thanks for mentioning chia seeds. Indeed they are suitable for a lower carb diet which many diabetics (and non diabetics) follow.

In fact chia seeds have many health benefits! They are one of the world’s oldest sources of nutrition, documented to have been eaten by the ancient Aztecs and Mayans as early as 3500 BC and even used for medicinal purposes.

I have not tried this recipe using anything like 'cool whip' as "while it may provide a tiny amount of nutrients, I don't think it provides the same health benefits as a serving of dairy.

The Ingredients in Cool Whip are:-
Water, Corn Syrup, Hydrogenated Vegetable Oil, High Fructose Corn Syrup, Less than Two Percent of Sodium Caseinate (from Milk), Natural and Artificial Flavor, Modified Food Starch, Xanthan and Guar Gums, Polysorbate 60, Sorbitan Monostearate, Sodium Polyphosphates, Beta Carotene (Color)."

I do know many readers tend to stay away from foods that are higher in fat.

However Eddie and I eat a low carb/high fat diet with a good/reasonable amount of protein, the balance works well for us and especially Eddie (a type 2 diabetic) as it keeps blood sugar levels in control.

I hope you may try this recipe because although not like an original rice pudding it is a good alternative to those who want to reduce the number of carbs they eat.

I haven't tried it but you may be able to substitute Ricotta cheese with cottage cheese!
