When you live the LCHF lifestyle you look for alternatives, or swaps, to foods like pasta and rice, for example take these two recipes. The first one swaps pasta for cauliflower and the second swaps pasta for courgette/zucchini.

excellent options suggested to us.
In my country we make a food called spanakorizo,
it contains spinach, radish, green onions, tomato and mint!
It is very nutritious and delicious!
I like carbs but also appreciate the variety here. Yummy!
And both alternatives would taste excellent.
I don't mind a bit of pasta or rice but my husband doesn't care for it at all but will eat it if he has to.

We've tried to swap cauliflower but neither of us liked it. Zucchini and spinach sounds good though!

For diabetics or not, they are still two very tasty and healthy proposals. Spinach at home is never lacking, since I sow it at least twice a year, and if there is any leftover I freeze it freshly cut.
