Chicken Club Casserole : Low Carb / Keto Style


How about this combination of chicken, cheese, and mayo, served up in a quick and creamy low carb / keto casserole, it works out at 4g carbs per serving!

Ingredients:
Serves Four
1 rotisserie chicken
2 tomatoes
5 oz. / 150 g cooked bacon
1 dill pickle
½ cup / 125 ml mayonnaise
6 oz. / 175 g shredded (grated) cheddar cheese
salt and pepper
Serving
6 oz. / 175 g leafy greens - for example baby spinach
4 tablespoons of olive oil

Depending on your taste, some may like to add a little onion and/or spices to this recipe.

Sounds delicious except the dill pickle. I'm not a fan of dills, but without it would be nice. I roasted a chicken today and have plenty of chicken leftover. Yum! ♥

Wish I'd been around on Monday for your Spiced Parsnip Soup with Coriander and Chili Pesto. It sounds great, Sadly, I'm not a fan of mayo. In fact, when I need a base for salads, I turn to ranch dressing, rather than mayonnaise. However, I might actually serve this to some friends who are coming by on Sunday.
