Crab Florentine Bake : Low Carb


This warming and comforting baked dish is full of spinach, cream and crab. This recipe makes two very generous entrée portions if served with a salad, but you may prefer to divide it between three or four people and add a more substantial side dish ... 

Ingredients:
10oz box/packet of frozen spinach
2 tablespoons of unsalted butter
1 tablespoon flour 
1/2 teaspoon minced garlic
1/2 cup heavy (double) cream
1/2 cup water
2 tablespoons white wine
2 tablespoons shredded/grated Parmesan
8oz. crab meat
salt and pepper 

Each serving 7.2 g net carbs.

I often think of you when I visit my client. She has 7 kids, plus they have 6 spouses. I believe there are 9 of them with diabetes. sigh.
