Chicken and Mushrooms : Low Carb and Delicious


Please look away if you don't like mushrooms! However if like us you love them, especially when added to a chicken dish, please read on. Chicken can make a tasty meal and is usually very reasonably priced, it's also one of the most popular meats around. It has a high level of good quality protein, as well as B vitamins, iron, copper and selenium.

Ingredients:
Serves Four
1/4 cup butter (or ghee)
2 cups mushrooms, sliced
Four large chicken thighs
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 cup water
1 teaspoon Dijon mustard
1 tablespoon Summer savoury or fresh tarragon, chopped

Approx. nutrition per serving: 447 calories, 31g fat, 1g net carbs, 37g protein

Tarragon is a popular and versatile herb, it has an intense flavour that's a unique mix of sweet aniseed and a mild vanilla. The leaves are narrow, tapering and slightly floppy, growing from a long, slender stem. It's a key herb in French cuisine (it's an essential ingredient in sauce Bernaise), and goes very well with eggs, cheese and poultry.

I had chicken and mushrooms last night. My daughter went to the store for me and bought baby bellas instead of the white button mushrooms but they were very good. Firs time I'd had them.

I do like mushrooms. never tried tarragon though. Can't stand the taste of aniseed though, the combo of that and vanilla does sound like a really unusual one.
