Even if you don't grow your own you may find them at reasonable/low prices at your local farmers market, or supermarket, so you can get lots in now and cook them for later. The only problem with this bounty of courgettes is not getting bored of them! So, you may already have a favourite recipe but how about these two suggestions, which one would you prefer? You may try them both!
Smoked Ham Stuffed Zucchini / Courgette Boats
Ingredients
Serves Four
7g carbs per serving
2 zucchini / courgettes
1 teaspoon salt
1 tablespoon olive oil
15 oz. / 400 g deli smoked ham
4½ oz. / 125 g cottage cheese
2 tablespoons mayonnaise
2 tablespoons red onion, finely chopped
½ tablespoon dried rosemary
1½ cups / 0.4 litre shredded/grated cheese
salt and pepper
For serving
7 oz. / 200 g lettuce
4 tablespoons olive oil
½ tablespoon white wine vinegar
salt and pepper
1 teaspoon salt
1 tablespoon olive oil
15 oz. / 400 g deli smoked ham
4½ oz. / 125 g cottage cheese
2 tablespoons mayonnaise
2 tablespoons red onion, finely chopped
½ tablespoon dried rosemary
1½ cups / 0.4 litre shredded/grated cheese
salt and pepper
For serving
7 oz. / 200 g lettuce
4 tablespoons olive oil
½ tablespoon white wine vinegar
salt and pepper
Why not vary the recipe by using this filling in aubergine/eggplant or bell peppers

1¼ cups / 0.3 litre shredded/grated cheese
4½ oz. / 125 g cottage cheese
2 tablespoons mayonnaise
1 tablespoon yellow curry powder
1 teaspoon onion powder
salt and pepper
For serving
7 oz. / 200 g lettuce
4 tablespoons olive oil
½ tablespoon red wine vinegar
salt and pepper
1 teaspoon salt
1 lb / 450 g chicken breasts
1 tablespoon olive oil
1 tablespoon butter
1¼ cups / 0.3 litre shredded/grated cheese
4½ oz. / 125 g cottage cheese
2 tablespoons mayonnaise
1 tablespoon yellow curry powder
1 teaspoon onion powder
salt and pepper
For serving
7 oz. / 200 g lettuce
4 tablespoons olive oil
½ tablespoon red wine vinegar
salt and pepper
You could vary this recipe by using this filling in aubergine/eggplant or bell peppers.
