Rhubarb with its elegant stalks of bright pink is perhaps a true symbol of spring. Rhubarb grows from a root that can live for up to 20 years, with some varieties growing stems up to 1.5m long. Choose firm, straight stalks that have a bright red colour. Avoid those that are limp or discoloured, or stalks that are very thick. Older stalks may be a bit stringy, like celery, but spring rhubarb will be tender, so there's no need to peel it. Rhubarb stalks are highly nutritious, containing calcium, manganese, vitamin C, vitamin K, fibre, and a whole host of antioxidants.
Today I am sharing three lower carb recipe choices that use this "fruit". I call it a fruit however, botanically, rhubarb is a vegetable (it's related to sorrel and dock) but its thick, fleshy stalks are treated as a fruit.
Rhubarb Crisp
although in the UK we would call this rhubarb crumble
You can see this low carb and gluten free recipe here
Strawberry and Rhubarb Upside-Down Cake
this is a lower carb recipe with only 4 net carbs per serving
you can see more details here
Rhubarb Fool
A fruit fool is a classic and quite delicious English dessert
please have a look at this lower carb recipe here
I wonder have you a favourite looking recipe out of these three?

After seeing these lovely photos I might be tempted to try any of them. :)
All three look delicious, but perhaps the upside down cake would be number one choice.

I’ve loved rhubarb since I was a kid. Unfortunately I can’t have it now due to its high oxalate content. I still make one strawberry rhubarb pie every year for my husband and I have one slice.
It is rhubarb time of year! -Christine cmlk79.blogspot.com
Crumble is what I call the rhubarb crisp. I haven't really found a topping I like that crisps up though :) Maybe I'll try the trick in this recipe.
...I love rhubarb!
Gracias por las recetas. Nuca he probado ruibarb. Te mando un beso.
I think the last time I had it I musta been a kiddo. I did though order a veggie and fruit sheeter. Makes sheets to use in bakes instead of pasta and wheat noodles.
Sounds so healthy, but sadly I don´t like sweets... I once tried it (can´t remember exactly where or with what) - it was sour!
They look so delicious, and I do love rhubarb.
YUM.
Rhubarb sounds like a perfect spring treat, full of nutrients and flavor! The tips on selecting fresh stalks and using it in lower-carb recipes are great—I'll definitely keep that in mind next time I cook with rhubarb.
We enjoy rhubarb in different creations; today's was a low sugar jam that also had strawberries.
I think I was turned off rhubarb when it was stewed for school dinners. Yuk!
I love rhubarb but too much of it doesn't like my teeth! All of these look delicious.
All the best, Debbie
Just had rhubarb pie yesterday.
God bless, Jan.
🌸🌸Pyszne propozycje. Ja sobie dam cukier, wolę słodki rabarbar. On potrafi być bardzo kwaśny.
I like rhubarb but never think of buying or growing it. Obviously, I don't like it enough!

🌸🌸Delicious suggestions. I'll add sugar, I prefer sweet rhubarb. It can be very sour.
Looks delicious, I have never tried rhuburb.
Take care, have a great day and a happy weekend.
I made strawberry rhubarb crisp yesterday. It was yummy. I don't think mine was low carb though, even if I did cut back on the sugar about 90%. Happy weekend.
I planted rhubarb when I first arrived here, but it didn't take. I just replanted some, but it takes a year before it starts producing.
I haven't had rhubarb in years. My neighbor, Prissy, used to give me rhubarb from her garden to make strawberry rhubarb pie.
I love rhubarb.
All three look so delicious, I could eat any of them.
Have a great weekend!
Oh Yes... I love rhubarb and will be making a rhubarb pie this weekend. :-)

I been thinking of rhubarb lately.
We had it growing in our yard, when I was growing up. I thought it was a weed until I was in my 30s. Haha...my mom never cooked with it, but she should've!!
I do like rhubarb. My gran used to have it in her garden and make rhubarb crumble and such. Those were the days :-D
All three looks delish! Wow! ~ thanks,
Wishing you good health, laughter and love in your days,

OH I do love rhubarb. I worked as a waitress at the Chicken House at Knotts Berry Farm in 1960. One of the things on the menu was the famous rhubarb sauce. I fell in love with rhubarb then and love it to this day. I will use your recipes. They all are making me drool!!! Thanks! btw minimen wage back then was $1.20. A lot has changed...but they still serve rhubarb.
Yummy. I just had some rhubarb last night. :) I was given LOTS of rhubarb the other day!!!
I have to say - I don't really use much of this rhubarb or eat it.
I've never had rhubarb before.
It's been many years since I have had any rhubarb, Jan. It's never been a favorite in my household.
YUM, the first two sound really good!
Some great recipes, I like that rhubarb crisp one, we have a glut of rhubarb in the garden so no excuse to not make one of your suggestions.
Tis the season for rhubarb! I've made a cream cheese and rhubarb dessert, and a rhubarb cake (not low carb). I eat one portion and my husband eats the rest. I freeze portions that he can quickly thaw.
I love the tartness of rhubarb in the spring.
Thank you, Jan. These will be very useful recipes for my rhubarb crop this year.
Nunca he comido ruibarbo, tendré que hacerlo. Besos.
I made a rhubarb crumble last Saturday and may well make another one this weekend!
