Lowcarb Chorizo and red onion crustless quiche.



Ingredients:
4 eggs
  70 grams of thinly sliced Chorizo
A quarter of finely chopped red onion
6 tablespoons of double cream
Salt, pepper and dried mixed herbs to taste.
Serves 2

Mix the eggs, cream and seasoning in a bowl or pyrex jug
Place a layer of Chorizo and chopped onions into a non stick baking dish 8" x 1"
Pour over half the egg and cream mix
Add another layer of Chorizo
Pour over the remaining egg mix
Place into a pre heated oven at 190c and cook for twenty minutes.
This crustless quiche rises like a souffle and is best served hot.

Made this yesterday and ate it with a very nice crunchy salad, plenty of ice berg lettuce. It tasted very nice. Followed by fresh berries and double cream. Lovely.

The Sunday roast is cooking and some chardonnay is chilling, thanks to my wife. So to quickly tell you that she made this quiche yesterday. She announced she had all the ingredients and we were going to eat it for high tea. Why high tea I'm still not sure think it was because we ate about 4pm I didn't ask just said what a good idea dear! Well something like that LOL
We all enjoyed it specially the kids who said they preferred it to the one with green veg, they mean the asparagus crustless quiche. The only down side was we did not have my favourite strawberry cake. Wife had just bought some punnets of fruit - oh well.

There is a good selection of fresh fruits available at the moment to enjoy with double cream. Perhaps it will be a low carb sponge cake next week Doug or even tomorrow!
