Pulled Pork with Roasted Tomato Salad : Low Carb


Pulled pork is a method of cooking pork where what would otherwise be a tough cut of meat is cooked slowly at low temperatures, allowing the meat to become tender enough so that it can be "pulled", or easily broken into individual pieces. Pulled pork is found around the world in a variety of forms.
Pulled pork, usually shoulder cut (sometimes referred to as mixed cuts), is commonly slow-cooked by a smoking method, though a non-barbecue method might also be employed using a slow cooker or a domestic oven. In rural areas across the United States, either a pig roast/whole hog, mixed cuts of the pig/hog, or the shoulder cut (Boston Butt) alone are commonly used, and the pork is served with or without a vinegar-based sauce. Before cooking, it is common to soak the meat in brine; it provides the extra moisture needed for a long, slow cooking process.


This recipe suggestion is from Anne Aobadia at Diet Doctor site, she says ... savoury pulled pork is always tender. Roasted tomatoes are always full of flavour. Avocado hummus is always creamy. Put all three on a plate, and you have satisfaction guaranteed ...

For six people here is what you will need:
Pulled pork
1 tablespoon cocoa nibs or cocoa powder
½ tablespoon ground black pepper
½ tablespoon ground ginger
½ tablespoon paprika powder
½ teaspoon anise seeds or fennel seeds
½ teaspoon cayenne pepper
2 tablespoons olive oil
2 lbs / 900 g pork shoulder
1 tablespoon salt
Roasted tomato salad
1 1⁄3 lbs / 600 g cherry tomatoes
3 tablespoons olive oil
1 teaspoon sea salt
½ teaspoon ground black pepper
2 scallions (spring onions)
1 tablespoon red wine vinegar
Avocado hummus
3 ripe avocados
½ lemon, the juice
8 tablespoons / 125 ml fresh cilantro
4 tablespoons / 60 ml olive oil
4 tablespoons / 60 ml sunflower seeds
2 tablespoons tahini (sesame paste)
1 garlic clove
½ teaspoon ground cumin
salt and pepper

Did you know ... Cilantro is a herb with wide delicate lacy green leaves and a pungent flavour. The seed of the cilantro plant is known as coriander. Although cilantro and coriander come from the same plant, their flavours are very different and cannot be substituted for each other. (Some countries refer to the cilantro as coriander, so any references to "fresh coriander" or "coriander leaves" refer to cilantro.) It can be easily confused with flat-leaf parsley in appearance, so be sure to sniff carefully. Look for a bunch with un-wilted leaves in medium green. Found fresh year round in most markets.

Always a good choice (pulled pork) on a restaurant menu to help one stay on track with the diet when dining out.
I bet it would make the house smell good, too..........

Hmmm, no I did NOT know cilantro and coriander come from the same plant. Oddly enough, my hubby and I don't care for cilantro, but I use coriander quite frequently.

I make pulled pork every once in a while, and it's quite a production, what with the brining, making and resting in the rub, slooooooooow cooking, cool-down period and pulling. (But it's totally worth it!)
