It's midweek and I share three lower carb food choices for your consideration
Mustard and Sage Chicken with Celeriac Mash
Swapping potatoes for celeriac lowers the carbohydrates in this lovely mid-week dinner suggestion ... ready in under half an hour and tastes great!
Ingredients
Serves Three
10 carbs per serving
1 celeriac, peeled and cut into chunks
3 chicken breasts, skinless
1 tbsp. English mustard powder
2 tsp olive oil
2 garlic cloves, crushed
8 sage leaves, chopped
100g low-fat crème fraîche, plus 2 tbsp. for the mash
1 chicken stock cube
2 tbsp. wholegrain mustard

275g cooked green veg, such as thin-stemmed broccoli, peas or Savoy cabbage,

Sausage with Cauliflower and Parsley Rice
Ingredients
Serves Four
15g carb per serving
1 red bell pepper
2 yellow (white) onions
2 oz. / 55 g butter
1 lb / 450 g fresh sausage, use ones with a lot of flavour such as Toulouse or chorizo
(also check carb content)
1 oz. / 28 g sun-dried tomatoes, preferably in olive oil
1 tablespoon Dijon mustard
2 tablespoons tomato paste
2 tablespoons dried thyme
1¼ cups / 300 ml heavy (double) whipping cream or sour cream
salt and pepper
Fried cauliflower and parsley rice
1½ lbs / 700 g cauliflower
4 oz. / 110 g butter
¼ cup / 60 ml chopped fresh parsley

Aubergine / Eggplant Melts
Ingredients
Serves Four
7g carbs per serving
3 tbsp. olive oil2 aubergines (eggplants), halved lengthways
4 tomatoes
1 x 150g ball mozzarella, drained
seasoning to taste
