"Are we getting more health conscious? I have been reading quite a few articles recently that say 'green' vegetable sales are improving. In my weekend magazine from Waitrose it states "Courgettes (Zucchini) sales have increased by 13% over last years sales, and Spring Greens, Kale, Spinach and White Cabbage sales have also increased." Many more people are now using the low carb vegetable alternatives, rather than the higher carb foods, such as pasta and rice. A lower carb alternative does not cause the blood sugar spikes, especially important if you are a diabetic ... but increasingly those who are looking for a healthier lifestyle such as LCHF (low carb high fat) find the swap you make so worthwhile to your general health and well-being. You only have to look at this blog and many other 'low carb' blogs to see the many positive outcomes people are experiencing."
Now it's 2025 and I and I think many readers enjoy swaps, like these three below.
Swap: pasta for courgette/zucchini
Spinach and ricotta lasagne with courgette (zucchini) pasta
see recipe here
Swap: rice for cauliflower
Sausage with Cauliflower and Parsley Rice
more details here
Also Low Carb Cauliflower rice - see here
although many supermarkets now sell ready frozen cauliflower rice
Swap: tacos for lettuce
Cajun Chicken Lettuce Tacos and Carrot Fries
more details here
Doesn't the food look great?
Perhaps you'll try one (or all) of these recipe suggestions?
All the best Jan

Delicious dishes
I do think we are getting more healthy. I think people are trying to avoid processed foods and eating more fruits and vegetables.
The food does look scrumptuous and carrot fries sounds great. My daughter makes pickled carrots, which doesn't sound very good but they certainly are tasty. YOU, have a great one;)
Gracias por la receta. Te mando un beso.
These dishes look delicious, Jan! I think swapping is a great idea! Thank you so much for sharing.
These look so delicious! They’re making my mouth water, yum, yum, YUMMY! Thank you for sharing this. It’s very interesting and good to know.
I hope all is well with you and the family. Have a wonderful “rest-of-the-week” and coming weekend, my friend.
The lasagna sounds especially tempting - II never made that white sauce, though. Ingo did and it looked so complicated - is there an alternative?
All is looking good. Hoping the trend continues down to the southern hemisphere before too long.
Oh yes, I find that much tastier too, but my husband doesn't like it at all. I still try to make it tasty for him, or simply cook it. Since he's not overweight or anything, he's always saying all that unhealthy stuff and meat. He sometimes gets rheumatism, but he's stubborn and wants to change things. Unfortunately, I often have to cook two different dishes, which is exhausting!
They all look delicious. Ten years can make a huge difference, I think we're learning all the time and there's more information out there about what's healthy and what's not, and lots of great recipes too.
Very tasty I'm sure.
God bless.
All the dishes look delicious! Thanks for sharing. Take care, have a great day!
Change comes slowly and is to be welcomed and encouraged.

Hello Iris
Many thanks for your comment.
The white sauce in this recipe is quite an easy one and will only take about five or six minutes ... it is a lovely part of the dish.
There is an all in one recipe for white sauce you may prefer ... find it here:-https://www.bbc.co.uk/food/recipes/allinonewhitesauce_66114
Enjoy your day and the rest of the week.
All the best Jan
Thank you, Jan, that sounds much easier!
...carrot fries look interesting.
Boa quinta-feira com muita paz e saúde. Como quase todos os tipos de vegetais, abobrinha é um dos poucos que não gosto. Até pimenta eu como. Obrigado por suas dicas maravilhosas.
I'll take note of this lasagna and its recipe. I like both lasagna and zucchini, and I consider them healthy and delicious.
Best regards
Jan, all three of these recipes look so delicious. Thank you for sharing the recipes with us.
I always try to swap out the pasta with a veggie alternative.
I'm a big fan of parsnip 'fries' which I don't fry, but toss with olive il and bake in the oven.
These are great and tasty choices.

Have a peaceful and healthy Thursday. Like almost all vegetables, zucchini is one of the few I dislike. I even eat peppers. Thank you for your wonderful tips.
this is a great post and i am glad you brought it back to life. you always share wonderful meals and ideas. i hope you are ok, i think about what you have been though and i always say a little "well wish" to you when i do!!
One of the reasons I enjoy your blog so much dear Jan, apart from all these delicious, healthy recipes you share, is that you write such interesting articles on various foods. I find myself reading more on 'good-for-you-foods' these days. Thank you for sharing yours. All the best, Denise xo

Hello Debbie and thank you so much for your kind thoughts and good wishes. I am doing okay thank you ... I'm sure at times Eddie is looking down at me saying 'keep going' and I will :)
I do appreciate our blogland friendship.
All the best Jan
Yes, all of these dishes look good.
Both dishes look delicious.
Good looking dishes, Jan. Thanks for sharing.
Delicious meals thanks a lot for sharing, wish you happy friday.
You save lives.
What we eat matters. Thank you.
Just reading this post has made me realise that I have changed my eating habits over the years. Every meal would have had potato or pasta or rice accompanying the protein and veg but now they are rarely on the plate as different veggies take their place. Your recipe ideas have contributed to the change over the years so thank you.
Good ideas. A simple swap can make a huge difference :-D
Now if only I could get my husband to eat more veggies-grin. This looks very tasty!
I have been noticing more things including cauliflower lately as a base or side. Have a great weekend!
I love this, my kinds of eats. I made a zuke rollup with non-dairy cheese though real cheese works really well too. Red sauce. So good. So, so good. What I like about zukes is I don't feel STUFFED after eating them. As for cabbage, oh yeah, I grew up on cabbage. Soooooo good.
Me parece una buena noticia. Besos.
