Just Swap - Doesn't It Make Sense - Re-visited

Back in 2015 I wrote ...

"Are we getting more health conscious? I have been reading quite a few articles recently that say 'green' vegetable sales are improving. In my weekend magazine from Waitrose it states "Courgettes (Zucchini) sales have increased by 13% over last years sales, and Spring Greens, Kale, Spinach and White Cabbage sales have also increased." Many more people are now using the low carb vegetable alternatives, rather than the higher carb foods, such as pasta and rice. A lower carb alternative does not cause the blood sugar spikes, especially important if you are a diabetic ... but increasingly those who are looking for a healthier lifestyle such as LCHF (low carb high fat) find the swap you make so worthwhile to your general health and well-being. You only have to look at this blog and many other 'low carb' blogs to see the many positive outcomes people are experiencing."

Now it's 2025 and I and I think many readers enjoy swaps, like these three below.

I do think we are getting more healthy. I think people are trying to avoid processed foods and eating more fruits and vegetables.

The food does look scrumptuous and carrot fries sounds great. My daughter makes pickled carrots, which doesn't sound very good but they certainly are tasty. YOU, have a great one;)

The lasagna sounds especially tempting - II never made that white sauce, though. Ingo did and it looked so complicated - is there an alternative?

Oh yes, I find that much tastier too, but my husband doesn't like it at all. I still try to make it tasty for him, or simply cook it. Since he's not overweight or anything, he's always saying all that unhealthy stuff and meat. He sometimes gets rheumatism, but he's stubborn and wants to change things. Unfortunately, I often have to cook two different dishes, which is exhausting!

They all look delicious. Ten years can make a huge difference, I think we're learning all the time and there's more information out there about what's healthy and what's not, and lots of great recipes too.

The white sauce in this recipe is quite an easy one and will only take about five or six minutes ... it is a lovely part of the dish.

Just reading this post has made me realise that I have changed my eating habits over the years. Every meal would have had potato or pasta or rice accompanying the protein and veg but now they are rarely on the plate as different veggies take their place. Your recipe ideas have contributed to the change over the years so thank you.

I love this, my kinds of eats. I made a zuke rollup with non-dairy cheese though real cheese works really well too. Red sauce. So good. So, so good. What I like about zukes is I don't feel STUFFED after eating them. As for cabbage, oh yeah, I grew up on cabbage. Soooooo good.
