Crustless Asparagus Quiche : Great Low Carb Food

Yes, fresh asparagus is great ... fresh green beans are great, lets face it fresh vegetables are really good and we each have our favourites. However, on the odd occasion, I do sometimes use frozen or tinned ... like in this recipe.

Ingredients:
Serves 2-4
6 eggs
6 tablespoons of double (heavy) cream
One tin of whole asparagus spears 244 grams
1 heaped tablespoon of Jalapenos green peppers for extra zap* optional
Salt and pepper to taste.

Method:
Mix the eggs and cream together well in a bowl or Pyrex jug
Pour into a non stick baking dish 8" x 1.5"
Place the asparagus spears and optional Jalapeno green peppers
Place into a pre heated oven at 190C / Gas 5 and cook for twenty minutes.
Serve with a mixed salad.
Great low-carb food.

Check that the quiche is properly cooked by placing a knife in the centre, it should come out clean.
Also, as ovens vary just keep an eye on the quiche while cooking.
This quiche tastes delicious eaten hot or cold.

... now please excuse me as I sit down and enjoy!

All the best Jan

Yes, fresh is wonderful, but frozen and tinned are great for those times we have not been able to get to the store. Another delicious recipe, thanks Jan :)

Good morning Jan!:) Lovely to see you again. Thank you for another great recipe. I have taken note and will definitely try it out, as we both like asparagus and eggs. Does it freeze well? I'm asking because a friend of ours who comes to stay with us every year, will arrive soon, and I have been cooking for the freezer, so we will have more free time to chill out together.

Jan, I couldn't find a cow creamer I liked, but I did buy two super hand painted mugs, and four pretty egg cups instead.:)

I love quiche, but hate asparagus. I could substitute with zucchini and tomatoes.

Asparagus I love. We had lots in Menorca plus asparagus soup. And now it's coming into season here. Pity about the strange after effects but it's worth it to eat this delicious treat.

Asparagus for sale at the Farmer's Market - I would have bought some too!
Glad you got your new computer all sorted.

Tom
... it definitely is asparagus time, you can't beat it!

Grace (Perth Daily Photo)
If you have eggs in the larder and asparagus either fresh, or in a tin, this quiche is a winner!

Valerie-Jael
Agree 100% - it is very Yummy!

Mary
Quiches (and Frittata's) are so popular in our house. They are so quick, easy and nutritious too. I hope you may give this a try!

Christine
... and it is delicious!

Dora (peppylady)
Perhaps you may give this quiche recipe a try, it does taste great!

Asparagus is so good to eat like in this quiche, or just on it's own with butter, it's Yummy!

Regine
Glad you loved this!

Stephanie
So simple and so tasty, hope you may enjoy a slice soon!

Asparagus is not to everyone's liking. How about making this with zucchini (courgettes), spinach, broccoli or peas! We sometimes have a mixed vegetable quiche, it's just so tasty!

Mildred
Glad both you and John like asparagus, perhaps you may enjoy this quiche soon!

Denise
... sometimes it is just handy to use tinned, although fresh is just so good!

You asked does this freeze well - I've never frozen one, but I'm sure it will!
Now these crestless mini quiches are also excellent and freeze well, see recipe idea here http://thelowcarbdiabetic.blogspot.co.uk/2015/04/mini-quiches-low-carb-paleo-wheat-free.html
Shame you couldn't find a cow creamer you liked, but pleased to read you did buy two super hand painted mugs, and four pretty egg cups instead ...

River
We do all have different food tastes. I think your idea of zucchini (courgettes) and tomato sound great!

Phil
Sunshine, Menorca and asparagus - what a great mix. Shame about your camera though, hope it can be fixed ok.
With regard to eating asparagus and the strange after effects, I thought this article was very interesting http://www.webmd.com/food-recipes/features/why-pee-smells-funny-eat-asparagus ... note it says 'you're not only normal you have a good nose' !
