Pork Chops Smothered with Caramelized Onion and Bacon

Low Carb Smothered Pork Chop Recipe

How about some juicy, tender pork chops smothered in a creamy onion and bacon sauce? Does it sound good to you ... then please read on.

Ingredients:
Serves Four
6 slices bacon, chopped
2 small onions, thinly sliced
1/4 tsp salt
1/4 pepper
4 bone-in pork chops, 1 inch thick
Salt and pepper to taste
1/2 cup chicken broth
1/4 cup double (heavy) cream

Instructions:
1. In a large saute pan, cook bacon over medium heat until crisp. Use a slotted spoon to remove to a bowl, reserving bacon grease.
2. Add onions to bacon grease and sprinkle with salt and pepper. Cook, stirring frequently, for 15 to 20 minutes, until onions are soft and golden brown. Add onions to bacon in the bowl.
3. Increase heat to medium high and sprinkle pork chops with salt and pepper. Add chops to pan and brown on the first side 3 minutes. Then turn chops over and reduce heat to medium, cooking on the second side until internal temperature reaches 135F, about 7 to 10 more minutes. Remove to a platter and tent with foil.
4. Add broth to pan and scrape up any browned bits. Add cream and simmer until mixture is thickened, 2 or 3 minutes. Return onions and bacon to pan and stir to combine.
5. Top pork chops with onion and bacon mixture and serve.


Now I would serve this with some steamed broccoli or green beans ...

oooh my, this does look scrumptious. this is something i would definitely make, i don't cook pork enough, thanks for the recipe. i'll bet it would be delicious with chicken as well!!!!

Oh my gosh, this looks amazing. I love pork chops, and the caramelized onions and bacon on top sounds even better. Thanks for sharing, Jan. I'm not sure how good pork is for us, but I have it at least every two weeks. :)

... I think if we include a good variety of meat, fish poultry etc in our menu plans, we can't go too far wrong. Of course it is always down to an individuals choice what that recipe may be! Consideration must also be given to any underlying health / allergy issues. I like to enjoy my pork like this or in casseroles ... even kebabs!

This one my 3 would definitely like, much remember to give this one a go. They do like a bit of bacon. And I get to serve them lots of veg to go with. That bit they're not so keen on!
