I've just spotted this lovely recipe idea from Libby at Ditch The Carbs blog.
She uses coconut flour in her recipe for 'Coconut Flour Mini Cheese Loaves' they are low carb and work out at 1.3g net carbs per loaf.

Looks like something my Hubby would like to try as well as myself. He's a big fan of my blueberry muffins and cinnamon muffins too. When I make this sort of thing I have to freeze them right away or I'll eat way too many in a day. It does save money because just one muffin bought online costs $2.49 each. I can bake a batch of 8 for about $5.00 - 6.00 Thanks for the great recipe.
