From time to time pork medallions are on my shopping list. We enjoy them served with a selection of low carb vegetables, as you can see from the picture above. Pork medallions, cheese stuffed mushroom, asparagus tips with a big knob of butter, mashed swede and carrot, and a few roasted celeriac bites - less than 15 carbs.
'Pork fillet medallions and loin medallions are becoming more widely available in supermarkets, but if you can’t get hold of them then choose a pork steak instead. You can either cut the fat off to get a medallion or cook it as it is and all our recipes work for loin steaks too, see recipes and read more about pork medallions' here

I love those pork medallions. Always reasonably priced when you feel like some chops and they are too expensive.
...sure looks good.
A very attractive meal! :))
What beautiful and delicious dish!Best wishes,Jan!
This looks so good and that presentation is very pretty.
I need to serve some asparagus.
Lots of yummy looking food on that plate:)
I must admit that I've never seen pork medallions being sold. We did have pork chops with veg for dinner last night though.
Looks like a very satisfying meal Jan. You have wonderful healthy dinner ideas. ♥

looks delicious. We recently brought a loin and then cut them into medallions--a little cheaper but we ate more!

Great way to add pork inexpensively.
Thank you Jan 💮
Looks healthy and delicious! We are going to try a version of the no potato salad today with the cauliflower that you posted the other day. Very excited to try something new and tasty!
Delicious meal!
Definitely looks like a winner.
This looks so good! Valerie

I googled! Swede is called rutabaga here.

Jan, that looks like a meal we'd enjoy very much. I love low-carb vegetables.
I think that's the first I've heard of pork medallions.

I would very happily eat all of those veg. Himself would happily eat the pork medallions. I think this makes us a version of Jack Spratt and his wife.

This blog makes me hungry no matter what time I visit here.
God bless.
This meal just looks and sounds soooo good. I do eat a bit of pork and of course all the veggies.
Look yummy. In India we have similar looking medallions called shammi kababs. :)
Sounds fantastic! Thanks, Jan!
Even before I became a vegetarian, I didn't care for the taste of pork. However, the photo was beautiful.
Looks rather nice.
Not a great lover of swede.
O prato tem um aspecto delicioso.
Um abraço e bom fim-de-semana.

Thank you for this. I am type 2 diabetic. I've been on the KETO diet for about 2 months now and have lost 30 lbs. I still have a hard time with giving up drinking pepsi or coke. I'm just done with being a diabetic (and it's only been 2 years)
This looks so wonderful ! I will be trying it soon.
I have such a hard time with my diet. When I eat what I should my numbers go up. When I am not so careful my numbers go down.
I am with @Christine, I have only been a diabetic for almost two years and it is bonkers.
Thanks for your great dinner ideas.
cheers, parsnip
Great advice here, thank you so much!
La comida se ve muy buena. Besitos.
