"Turkey meat is much leaner than beef or pork, so it can be a challenge to make a burger with ground turkey that still gives you the satisfaction of eating a juicy burger. One trick I use to infuse moisture into ground turkey is to add freshly grated courgette/zucchini. (Perfect for summer when those of us who garden have more courgette/zucchini than we can possibly use.)
It’s a trick I learned making these spicy turkey zucchini burgers with middle eastern flavours from the Jerusalem cookbook. No, the burgers don’t taste like courgette/zucchini, and yes, the grated courgette/zucchini works great to keep the burgers from drying out. Just make sure you are using fresh summer courgette/zucchini, and not something that’s shipped from thousands of miles away in the dead of winter when they are out of season.
Courgette/Zucchini doesn’t add much in the way of taste, and ground turkey is mild as well, so we need to bump up our turkey burgers with herbs and spices. In this Italian inspired turkey burger we are including chopped fresh basil and oregano into the burger mix, and serving the burger with a slathering of garlic mayo."
Doesn't this look so tasty … some may say absolutely gorgeous! I also like the little hints given, because I also find turkey meat can be a little dry. You can't beat courgettes/zucchini and the slightly smaller summer ones are just perfect.
If you should try this lovely recipe and are living the LCHF lifestyle (or do not eat grains) just do not include the burger bun - how about using a Portobello mushroom instead … tastes good.
Try Portobello mushroom "buns" instead of burger buns
Most burgers are usually more bun than filling! Change it up by with tasty Portobello mushroom buns. Simply brush two mushroom caps with a little olive oil, place on some aluminium foil and roast in the oven (400 F) for 20 minutes, flipping halfway through. Remove the stems once cooled slightly and add your fillings. Easy!

Did you know you cannot get self-raising flour in Germany. I forgot to bring some from Perth.
So much we cannot buy here. It´s a shame.
I know I would like this...love the look of that bun! I need to try some new bread recipes! I know you have lots of healthy ones. I don't eat much bread so don't usually bother with different flours, etc. Enjoy your day!

I have never used a portabello mushroom this way. But hamburger bun substitutes I have used are large slices of bell pepper and also slices of cheese microwaved And I like the idea of adding squash to ground turkey, too.
That's a good trick to use and a good way to use up courgettes, which are prolific when you grow them yourself.
