Chunky chorizo, thyme and bean stew - in a mug!

This really tasty and filling stew - served in a mug - is just perfect for the cooler Autumn days many of us are beginning to experience. Perhaps it is made extra special by being served in nice pink stripey mugs! Well, I say perhaps - as regular readers to this blog know - pink is my favourite colour!

However, you may prefer a mug like this

Anyway ... enough about mugs! Here are the ingredients you will need to make this tasty soup.

Serves Four
100g spicy chorizo, sliced
1 red onion, chopped
2 garlic cloves, crushed
1 red chilli, de-seeded and roughly chopped
15g thyme, leaves picked and roughly chopped
400g chickpeas, drained
395g mixed beans in mild chilli sauce
390g chopped tomatoes
200ml (reduced-salt) chicken stock

1. Heat a large lidded pan and add the chorizo. Fry for 2-3 minutes until just crisp. Remove the chorizo from the pan with a slotted spoon, leaving the oil.
2. Add the onion, garlic and chilli to the oil and cook gently for 3-5 minutes.
3. Add the thyme, chorizo, chickpeas and mixed beans to the pan and cook for 2 minutes. Stir in the chopped tomatoes and stock, and simmer, covered, for 10 minutes.
4. Remove the lid and simmer for a further 5 minutes, stirring occasionally, until the stew has thickened slightly. Ladle into mugs and enjoy.
5. Optional - some may wish to serve this with chunky bread - although speaking personally I would just enjoy my soup on it's own sipping it slowly, perhaps spoon in hand to empty the mug!

Each serving provides:
28.0g carbohydrate 9.0g fibre 16.1g protein 12.4g fat
You will note that this soup recipe provides 28.0 g carb per serving, so please take this into consideration if you are living the LCHF lifestyle.

Original recipe idea from here

As regular readers know, a variety of recipe ideas are shown within this blog ... but please note, not all may be suitable for you. If you may have any food allergies, or underlying health issues these must always be taken into account. If you are a diabetic and not sure how certain foods may affect your blood sugars, test is best, i.e. use your meter.

However, if the weather where you are is a little chilly, why not enjoy a mug (or bowl) of soup after your walk - so warm and welcoming.

I think this horse prefers hay!

Of course, if you are living in a warmer climate then you may prefer a nice plate of salad. How about this one? It's 'Jewelled Mushroom & Goat Cheese', and you can see the recipe here

Thanks for reading
All the best Jan

...nice for a cold late fall day.

Why is it that food is always more comforting when served in a mug. That looks like a lovely substantial meal for these colder days.

Jan, I think people either like chorizo or they dislike chorizo. My mom used to make chorizo and eggs growing up, so I'm very familiar with this food. I happen to like it, and you brought back some wonderful memories for me of my dear mom.

Have a nice week ahead, Jan.
