Chunky chorizo, thyme and bean stew - in a mug!


This really tasty and filling stew - served in a mug - is just perfect for the cooler Autumn days many of us are beginning to experience. Perhaps it is made extra special by being served in nice pink stripey mugs! Well, I say perhaps - as regular readers to this blog know - pink is my favourite colour!

However, you may prefer a mug like this


Anyway ... enough about mugs! Here are the ingredients you will need to make this tasty soup.

Ingredients:
Serves Four
100g spicy chorizo, sliced
1 red onion, chopped
2 garlic cloves, crushed
1 red chilli, de-seeded and roughly chopped
15g thyme, leaves picked and roughly chopped
400g chickpeas, drained
395g mixed beans in mild chilli sauce
390g chopped tomatoes
200ml (reduced-salt) chicken stock

Method:
1. Heat a large lidded pan and add the chorizo. Fry for 2-3 minutes until just crisp. Remove the chorizo from the pan with a slotted spoon, leaving the oil.
2. Add the onion, garlic and chilli to the oil and cook gently for 3-5 minutes.
3. Add the thyme, chorizo, chickpeas and mixed beans to the pan and cook for 2 minutes. Stir in the chopped tomatoes and stock, and simmer, covered, for 10 minutes.
4. Remove the lid and simmer for a further 5 minutes, stirring occasionally, until the stew has thickened slightly. Ladle into mugs and enjoy.
5. Optional - some may wish to serve this with chunky bread - although speaking personally I would just enjoy my soup on it's own sipping it slowly, perhaps spoon in hand to empty the mug! 

Each serving provides:
28.0g carbohydrate 9.0g fibre 16.1g protein 12.4g fat

Why is it that food is always more comforting when served in a mug. That looks like a lovely substantial meal for these colder days.

if you are going to eat soup from it, it must have a handle!!!! we have soup mugs, perfect size, perfect shape, perfect holding device!!!!

Jan, I think people either like chorizo or they dislike chorizo. My mom used to make chorizo and eggs growing up, so I'm very familiar with this food. I happen to like it, and you brought back some wonderful memories for me of my dear mom.
