Ingredients:
Serves 2 - 4
½ ripe medium avocado
4 cooked baby beetroot, quartered
Handful of baby leaf spinach
Drizzle of extra-virgin olive oil
Small handful of blanched and toasted hazelnuts, roughly chopped
Squeeze of lemon juice
4 (very fresh) large free-range eggs
Method:

4 cooked baby beetroot, quartered
Handful of baby leaf spinach
Drizzle of extra-virgin olive oil
Small handful of blanched and toasted hazelnuts, roughly chopped
Squeeze of lemon juice
4 (very fresh) large free-range eggs
Method:
1. Peel, stone and slice the avocado, then gently toss in a bowl with the beetroot, spinach, olive oil, hazelnuts and lemon juice. Season and set aside.
2. To poach the eggs, heat a large pan of salted water until it just bubbles gently. Crack an egg into a ramekin, then slide the egg into the water, lowering the ramekin as close to the water as possible. Using a dessert spoon, gently fold any stray strands of white around the yolk. Repeat with the other eggs. Cook for 2-3 minutes, then remove with a slotted spoon and put on kitchen paper to dry.
3. Divide the avocado mixture among 2 - 4 plates, then serve the eggs on top, sprinkled with salt and pepper.

Did you know:
When poaching eggs, the fresher, the better (ideally less than 4 days old). A fresh egg white clings more closely to the yolk in the simmering water.
Recipe idea from here
The original recipe idea serves two, but some may find one egg is sufficient, so amend recipe to suit ...
All the best Jan

I absolutely love poached eggs, in fact I love eggs full stop. I didn't know it's best to use fresh eggs when poaching, that's something to remember as it's infuriating when the white goes floating off.
Hello, looks like a great meal to start your day! Thanks for sharing! Enjoy your day!
Love poached eggs. And this idea, certainly peps plain poached eggs, up.

yum
That looks very yummy for a lunch, if you like avocado.
I love eggs and spinach, a great combination. I've never thought of adding in avocado too though!
Happy day, dear Jan! Once again, you have shared another fabulous recipe! I so enjoy seeing what you share and you always encourage me to eat better - thank you :)

Now, that is a lovely meal, fresh and low carb, thanks Jan.
I love a poached egg for breakfast but would never have thought to do it this way. Thanks Jan :)

Hi Jan, for some reason I just don't like avocado. I keep trying to find a way to use it in a way where I can't taste it. I know, almost everyone loves it but Mom didn't like it so we never learned to eat it as children. Maybe my aversion is hereditary:) Hope you're having lovely spring weather where you are.
I love a few slices of ripe avocado with almost every meal. This would be a nicely balanced meal for any time of day. YUM!
Interesting idea. I eat poached eggs fairly often. I've found that many restaurant cooks have no idea how to poach an egg!
Yummy! Every time I visit your blog, I get hungry. :-)

I had an Amazing lunch the other day of smashed avocado with toasted seeds and poached eggs so I'll have to try this.x
That looks utterly delicious!xxx
Poached eggs are delicious aren't they.
I like beetroot when it's pickled in sweet vinegar, inside brown seeded bread with some cheddar it makes a great sandwich.
