Ingredients:
Serves Four
3/4 c. balsamic vinegar
1 tsp. garlic powder
2 tbsp. honey
2 tbsp. extra-virgin olive oil
2 tsp. Italian seasoning
kosher salt
freshly ground black pepper
4 boneless skinless chicken breasts
4 slices mozzarella
4 slices avocado
4 slices tomato
2 tbsp. sliced basil
balsamic glaze, for drizzling

That sounds very, very yummy indeed - I´ll try it in a pan with a lid to melt the cheese, though. If I get a ripe avocado, that is! Not an easy job over here, very sadly! At least I have super-yummy tomatoes :-)

You've done well to mention chicken meat advantages: quality protein, vitamins and minerals. The above recipe is perfect (except for the mozarella as I don't mix meat with dairy) and the result - yummy (marinating always makes things better).

I was going through some of the older recipes to print some for my husband to take with him as he's working away in Sydney and on his own and I came across a low carb Orange mousse. I made it for dinner and my husband loved it!
