Iceberg Wedge Salad with Blue Cheese Dressing : Vegetarian


Sometimes you just want to tuck into a nice crispy salad ... this could fit the bill! It's a crisp salad with tangy blue cheese dressing, crumbled cheese and crunchy toasted walnuts - it can make a great accompaniment to steak - but obviously eat and enjoy it to your preference.

Ingredients:
Serves Two
50ml buttermilk
50g soured cream
50g mayonnaise
1 tsp lemon juice
75g blue cheese, crumbled
½ small pack chives, snipped
1 iceberg lettuce washed and quartered
25g walnuts, toasted and chopped

Method:
1. Make the dressing in a medium-sized bowl by combining the buttermilk, soured cream, mayonnaise, lemon juice and 50g of the blue cheese. Season and stir through the chives. Chill until ready to serve.
2. When ready to serve, pour half the dressing over the lettuce wedges and crumble over the remaining blue cheese and a scattering of walnuts. Serve the rest of the dressing on the side.

Yes, sometimes the simpler salad like a lettuce wedge is just what is called for. I enjoy the crispness of it and in it's simplicity it doesn't over power the taste of whatever it is paired with. Have a great week!

Although that looks great and the dressing sounds wonderful, one of the things I don't care much for even in my salad is lettuce....funny huh?

I like to snack on that blue. Sometimes I stuff large green olives with it.They make a Maytag Blue in Iowa that is a treat.

I kind of prefer lettuce on sandwiches as opposed to a salad. Looks good though.
