Serves Four
1 (2 lbs) large cauliflower, broken into florets
1½ tbsp olive oil, divided
salt and ground black pepper
9 oz. (1 2⁄3 cups) edamame beans
1½ lbs cherry tomatoes
4 garlic cloves, whole and smashed
½ tsp dried oregano
¼ tsp chili flakes, optional
¼ cup vegetable stock
10 oz. (2 cups) feta cheese
¼ cup (1⁄3 oz.) fresh basil, for garnish

Did you know
