Baked fish with cherry tomatoes and red onion


We do our best to bring a wide variety of recipe ideas on this blog,  but as always, depending on your likes, any allergies or other health related issues the recipes may not be suitable for all. For instance if you are diabetic and not too sure of your blood sugar tolerances it may be wise to use your meter and check your blood sugar readings. However, if you think this recipe is for you then why not give it a try. Simply white fish cooked on a bed of soft onions and bright vine tomatoes …. colourful and lovely tasting food.
 
Ingredients given below are for 2 people.
Preparation time, is approx 10 minutes
Cooking time, is approx 30 minutes
 
Ingredients:
2 tablespoons olive oil
4 garlic cloves, peeled and crushed
2 red onions, peeled and cut into 2cm wedges
225g pack cherry tomatoes on the vine (available from your supermarket)
2 fresh skinless white fish fillets
2 tablespoons fresh parsley, chopped
1 lemon, cut into wedges, to garnish
 
Method:
1. Preheat the oven to 180ºC, fan 160ºC, gas mark 4.
2. Toss together 1 tablespoon of the olive oil, the garlic and red onion wedges.
3. Place in a roasting tin and lay the vine tomatoes on top.
4. Lay the fish over the vegetables and drizzle with the remaining olive oil.
5. Season with sea salt and black pepper.
6. Bake for 30 minutes or until the fish is cooked through and serve scattered with fresh parsley and garnished with lemon wedges.
 
I always love some slightly crisp, fine, whole green beans served with fish  but the final choice is yours.
