If you want variety, why not swap the veggie! This dish can be made with other low-carb vegetables such as courgette/ zucchini, cauliflower, broccoli or spinach. Also feel free to use your favourite spices to give this dish more flavour, e.g. chili powder, paprika, onion powder, some herbs, or even freshly chopped garlic and basil...

this sounds wonderful, I made Pulla for my childrens family but my husband of course cannot eat it but Haloumi he could and would love!!

Looks marvelous! I bought some Halloumi a while back and it's still in my fridge. I will definitely have to cook some up this week and try it. The expiration date is in 2019 so I'm not that concerned but I really should move it on. I tend to hoard food on this diet. I have so much around that I'm starting to feel quilty for buying so much food. Have a wonderful Easter weekend.

Halloumi is too salty for me. I need to cut the pieces smaller and treat it like fetta as an accent I suspect.
