Sea Bass Marinated in Lime and Cumin, with a Mango Salsa



Do you like fish? Both Eddie and I enjoy eating fish, and it features quite regularly in our menu plans. So how about this idea for a quick, midweek meal for two, these cumin-spiced sea bass fillets are fresh and vibrant. The mango, avocado and coriander salsa adds a tropical vibe, with a hot kick from the horseradish sauce. Of course, you can easily replace the sea bass with any fish you have in the fridge, (or might prefer), and of course adjust amounts to suit how many you are cooking for!

Ingredients:
Serves Two
1 tsp cumin seeds
1 lime, zested and juiced
190g boneless sea bass fillets
1 mango, cut into small cubes
1 small avocado, cubed
2 spring onions (scallions), trimmed and finely chopped
2-3 tsp horseradish sauce, to taste
10g fresh coriander, chopped
220g pack tender-stem broccoli, stems cut from florets and halved lengthwise

Method:
1. Put the cumin seeds, lime zest and juice into a shallow dish, then add the sea bass, turning to coat. Set aside to marinate for 5 mins.
2. Meanwhile, make the salsa by mixing the mango and avocado in a bowl with the spring onions and horseradish sauce. Stir in the coriander, season to taste, then set aside.
3. Blanch the broccoli florets and halved stems for 3 mins in a pan of salted boiling water, or steam. Drain and set aside.
4. Put the sea bass and the marinade in a frying pan, add 75ml water and bring to a simmer. Cover and steam for 5 mins, or until cooked.

5. Serve the steamed sea bass with the broccoli and a generous helping of the salsa.

This looks wonderful!I could eat fish every day. And limes, or lemons always go with it. I love cumin too but have never tried it with fish. Since fish is one thing I never know what recipe to plan for until I see what's available at the market, I carry a card in my purse with what else to buy for each particular kind of fish I might buy. Saves getting home and not having an ingredient I need.

I had sea bass once in my life at a mexcian restaurant and it was so good. It was Chilean Sea Bass which I found out is pretty expensive. This looks and reads delicious. i'll have to let Mike know about this recipe.

Hi Jan, Eddie and Graham - I just thought I'd let you know about a diabetic blogger friend who finally went low carb after being told she HAD to go on insulin. There was no way she was injecting with insulin. She got her results today... HbA1c went from 90 to 43 !!! I think she's a convert to low carb.

Re your comment to me above: The blogger in question was one who publicly ridiculed me when I went low carb and suggested it could help her diabetes. Yes, I was fervent when I started and probably came across as too zealous but many of her blogger friends mocked me over a period of time. If I suggested something they would say nasty comments. Forward seven years and all her blogger friends are now saying "oh I must try this" etc. How times change huh?

I am so happy for her and never once will I say I told you so... just well done. It's not about who is right or wrong, just that someone is now much better than they used to be. Did I mention how much healthier overall she is now? No surprises there.

Keep up the great work here all of you :)

Sea Bass is so delicious but very expensive at the moment. Do you know that line fishermen are only allowed to take home one sea bass from our shores? Luck for anyone that knows a sea angler who doesn't eat fish. By the way, I think the famed stuff is pretty tasteless but might be better with this marinade.

Now this is a recipe I could really get into. Good fish is so ridiculously expensive, however, we eat less of it than we used to.
