Coconut Cream With Berries : Dairy Free and Low Carb


If you are looking for a dairy free yogurt or perhaps a quick and easy low-carb dessert then look no further! This delicious recipe could be just what you want.

I know many like to start their day with a yogurt in the morning, or indeed perhaps enjoy one at lunch-time. Now if you are 'dairy free' you can still enjoy 'yogurt' just try one of these three versions. 

Combine coconut cream with one of these three low carb fruits ... strawberries, raspberries or blueberries - so take your pick, which one is your favourite? This does make a great dessert choice too!

Ingredients
Serves One
120 ml / ½ cup
 coconut cream
(coconut cream which contains 35% fat was used)
55 g / 2 oz. fresh strawberries or raspberries or blueberries
1 tsp vanilla extract
Instructions
Mix all ingredients using an immersion blender.
(You can also add a spoonful of coconut oil to increase the fat ratio if required)

Coconut cream is very similar to coconut milk but contains less water. The difference is mainly consistency. It has a thicker, more paste-like consistency, while coconut milk is generally a liquid. Coconut cream is used as an ingredient in cooking, having a mild non-sweet taste. Coconut cream is available canned from Asian and Caribbean stores and larger supermarkets.

Anything with berries - surely one of the greatest food groups of all - is wonderful. We eat berries of one kind or another several times a week, and routinely add dried cranberries to our salads.
